Spring is here, and that means it's time to get in the kitchen and create a few of these delicious fresh fruit desserts for spring!
Included in this collection are plenty of strawberry desserts, but I'm also featuring a few blueberry and lemon, like a delicious lemon cream pie!

As spring arrives, we look to the bounty of in-season produce to enjoy in lucious desserts! Strawberries, blueberries, peaches and rhubarb are just some of the fresh fruit showing up in grocery stores and farmer's markets.
Fresh fruit is a great way to brighten up any dessert. Whether in a tart, a cobbler or on top of an ice cream sundae, fresh spring fruit can add a pleasing sweetness and natural flavor.
The possibilities are endless when it comes to creating delicious springtime desserts with fresh fruit!

How to keep fresh fruit fresh?
After bringing the fresh berries or peaches home, you want to make sure they stay fresh for as long as possible. Here are a few tips:
Wash the fruit either by placing them in a collander and running the water on top or using a damp paper towel.
You want to make sure you remove any extra dirt or germs that may be lingering on the fruit's surface.
Lay the fruit out on the counter on top of paper towels or clean dishcloths to dry. You do not want them to be damp when storing.
Place the fruit in separate airtight containers. Try not to store different fruits together.
Store the containers in the refrigerator until you're ready to use them.
Top Tip
It's important to make sure any fruit you use for a dessert recipe is very dry before adding it to the ingredients. Excess moisture can affect the texture and flavor.
Storing fruit in mason jars
One way I have been storing fruit lately is in mason jars. You'd be surprised at how fresh the fruit remains...even after a few weeks!
Simply wash the fruit and allow it completely dry. Then place the fruit in the mason jar. I like to add a coffee filter or two in between the layers of fruit to help trap the moisture.
Seal the jar and place it in the refrigerator for storage. Make sure you seal the jar after each time you help yourself to a serving.
What fruits should not be refrigerated?
Tomatoes, bananas and mangoes are examples of fruits that should not ever be stored in the refrigerator. Citrus fruits such as lemons, oranges and grapefruits are best kept at room temperature rather than in a cool environment.
Peaches, pears and apricots are also sensitive to cold temperatures and should be kept on the counter instead of in the fridge.
