Step-by-Step Directions
Step 1: In a small microwave-safe bowl, combine the white chocolate chips and oil. Microwave in 30-second intervals, stirring after each, until the chocolate is melted and smooth.
Step 2: Hold a wafer cookie over the bowl of melted white chocolate. Spoon the chocolate over the sides of the wafer, starting about halfway down. Once coated, place it on wax paper to set and decorate as desired. Repeat with the remaining wafers.
Quick Tip:
If the white chocolate chips become lumpy while melting, you can stir in a little extra shortening, oil or even coconut oil to help get the chocolate smooth again.
Step 3: Allow to sit at room temperature until dry and the chocolate is hardened or you may place in the refrigerator to speed up the process.

Christmas Cookie Storing Tips
Now that the cookies are made and looking so pretty, how should you store them so they remain fresh?
- Allow the cookies to cool completely before placing them in the air-tight storage containers. If you don't the heat of the cookies will create condensation which will eventually ruin the cookies.
- Place the cookies in a single layer in the storage container and then place a piece of parchment paper in between the layers. Never stack iced cookies like these on top of each other. They could stick!
- Then place the container on a shelf in your pantry. I do not recommend freezing these wafer cookies.

This happened to me when I was working on the White Cake Mix Christmas Cookies recipe. No matter what I did the white chocolate would not melt. I finally took the bowl out of the microwave after each 30 second interval and gave it a really good stir. I also added a tablespoon of vegetable shortening. And finally after awhile of following these steps, the white chocolate melted.
If the white chocolate you are melting is too thick, the best way to thin white chocolate is to add a fat. You can add a little extra oil, butter or even shortening. Start by stirring in just a little, then add more to get to the right consistency that you need for the recipe.

Christmas No Bake Cookies
Ingredients
- 1 pkg of vanilla sugar wafers
- 1 cup white chocolate chips
- 1 teaspoon shortening
- Decorative Christmas sprinkles
Instructions
- Lay out parchment paper on a baking tray.
- In a small bowl add white chocolate chips and shortening. Mix together. Microwave for 30 seconds. Stir. Then continue microwaving in 15 second intervals until the chocolate is melted and smooth.
- Holding a wafer in one hand over the bowl of white chocolate, use the other hand to spoon the white chocolate on all sides of the wafer starting about ½ way down the cookie.
- Once all sides are coated lightly, place on wax paper and decorate as you wish. Repeat as many wafer cookies as you wish.
- Allow to sit at room temperature until dry and the chocolate is hardened or you may place in the refrigerator to speed up the process.
