Made with a basic cookie dough, chocolate chips, crushed Oreo cookies and peppermint baking chips, these cookies are the perfect combination of a soft and chewy cookie base with crunchy bits of chopped Oreos with a hint of peppermint.

Recipe Notes

• If you can't find Peppermint Baking Chips, you can substitute crushed candy canes or crushed peppermint candies. However, I prefer the baking chips because they're chips creamy like chocolate morsels.
• Crushed peppermint candies may become sticky or chewy when baked, which could affect the overall texture of the cookie. When exposed to heat in the oven, the candies can melt and then solidify again, resulting in a sticky or chewy texture.
• Additionally, the strong mint flavor from the peppermint candies can overpower other flavors in the cookie, potentially diminishing the balance of flavors.

Step 1: Cream the butter, brown sugar, and granulated sugar together then add in the eggs.

Step 9: Fill parchment lined baking sheets with tablespoons of cookie dough. Refrigerate for 30 minutes to chill the dough balls.

Step 10: Bake for 10 minutes in a preheated 350°F oven.

• 1 1 ounce package dry vanilla pudding mix (sugar free pudding mix)

Method

 

1. Cream butter, brown sugar, granulated sugar in the bowl of a stand mixer.
2. Add the eggs, milk, and vanilla extract. Beat for an additional 2 minutes.
3. In a large bowl, combine together the flour, baking soda, baking powder, salt, and dry vanilla pudding mix. Add the mixture to the butter/sugar mixture and combine.
4. Carefully stir in the crushed cookies, peppermint baking chips, and the chocolate chips.
5. Drop by rounded tablespoonfuls onto a baking sheet lined with parchment paper. Place the baking trays in the refrigerator for 30 minutes to chill the dough balls. You can also freeze the dough balls at this point.
6. Bake in a preheated 350°F oven for about 10 minutes.
