Zoodles, the playful name for zucchini noodles, are a fantastic way to add more vegetables to your diet while cutting back on carbs. They're a delicious and versatile alternative to traditional pasta!
To make zoodles, you can use a specialized spiralizer, julienne peeler, or even a simple vegetable peeler. Or save time with pre-spiralized zoodles found in the freezer section.
Zoodles cook quickly, whether you sauté, boil, or roast them. Toss them with your favorite pasta sauces, pesto, or drizzle with olive oil and herbs for a light and refreshing meal.
They're perfect for summery dishes, but also cozy enough to enjoy during the colder months.

Ingredients
Step-by-Step Instructions
Step 1: Cook the frozen veggie spirals following the directions on the back of the packaging. Then drain them well in a colander to remove the excess water … just like you would with regular pasta!
Top Tip
After making your zoodles, blot them thoroughly with paper towels to remove excess moisture. This prevents them from becoming watery and soggy when cooked.
Homemade Chimichurri Sauce
Step 2: Quickly blend the ingredients together using a blender and set the sauce aside until the steak is finished cooking and you're ready to assemble the steak and veggie spirals.
Grill the Steak
Step 3: Seasoned the skirt steak with my House Seasoning or Easy Steak Seasoning. Grill for 3-5 minutes per side for medium-rare. Adjust cooking time for your desired level of doneness. Once the steak is done, slice it thin against the grain.
Step 4: Place veggie zoodles on the plate, then top with the sliced steak and drizzle with chimichurri sauce.

Storage Tips
Allow any leftover grilled steak to cool to room temperature, wrap it tightly in plastic wrap or aluminum foil to prevent it from drying out. Then, place the wrapped steak in an airtight container or a resealable plastic bag for additional protection.
Store this container in the refrigerator immediately and consume the leftover steak within 3-4 days for the best quality and food safety. If you plan to reheat the steak, consider slicing it thinly against the grain before storing for easier reheating and a more tender texture.
Freezing Tips
Place the wrapped steak in an airtight freezer-safe container or resealable freezer bag. Squeeze out as much air as possible. Label the container with the contents and the date of freezing.

- ½ cup red wine vinegar
- 1 teaspoon salt
- 3 cloves garlic
- 1 shallot
- 1 jalapeno pepper chopped
- ½ cup cilantro fresh
- ½ cup parsley fresh
- 1 tablespoon oregano dried
- ¾ cup olive oil
- 1.5 pounds skirt steak
- 2 tablespoons steak seasoning
- 12 ounces Green Giant Veggie Spirals, Zucchini
- 12 ounces Green Giant Veggie Spirals, Carrot
Instructions
- Prepare the zucchini and carrot spirals according to the package directions.
- Combine the garlic cloves, shallot, and jalapeño pepper in a blender or food processor and blend for a minute.
- Add the cilantro and parsley, oregano, and salt. Blend for another minute.
- Add the vinegar and oil. Blend until everything is completely combined. Set aside while you grill the steak.
- Spoon sauce over grilled meat.
- Sprinkle the seasoning generously over both sides of the steak, creating a visible coating.
- Heat your grill to medium-high heat (around 400-450°F). You want a hot grill for the perfect sear. Lightly oil the grill grates to prevent sticking. Place the steak on the hot grill grates. Grill for 3-5 minutes per side for medium-rare. Adjust cooking time for your desired level of doneness.
