Chocolate Marshmallow Peppermint Cookies - chocolate cookies topped with marshmallows and crushed peppermint candies are not only delicious, but make great gifts to give during the upcoming holiday Christmas Cookie baking season. Life is too short to say no to a cookie every now and then.
Today I'm sharing with you a brand new cookie recipe that you can use for entertaining or as gifts as we get close to the holiday season. I'm also joining nine other food bloggers today to bring you the BEST Christmas cookies.

A few years ago I made these Chocolate Marshmallow Peppermint Cookies for a cookie exchange party. Not only were they a delicious tasting cookie, but I think they're the perfect cookie to give as gifts to family and friends over the holiday season.

- 1 ¼ cups butter - 2 ½ sticks softened
- 2 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups flour
- 1 package chocolate pudding mix- 3.56 ounce size
- ¾ cup cocoa
- ½ teaspoon salt
- 1 package large marshmallows - each one cut in half
- 1 cup chocolate chips
- ½ cup peppermint candies crushed
Directions
In a large bowl, cream together the softened butter and sugar. Add the vanilla and continue mixing until everything is smooth.
Next, combine the flour, pudding mix, cocoa until blended. Slowly add the dry ingredients into the wet mixture.
Baking Instructions
Drop by rounded spoonful onto a baking tray that's been lined with parchment paper. Then place the tray in a 350 degree preheated oven and bake for 9 minutes.
Tip for Adding the Marshmallows
The very first time I made these cookies I used one entire marshmallow on top of each cookie. BIG MISTAKE. As a result, the marshmallow melted over the entire cookie creating a huge mess.
Thankfully I had only baked one tray of cookies with the entire marshmallow. I was able to adjust everything to have the remaining cookies turn out perfect by slicing each marshmallow in half.
Please make sure you cut each marshmallow in half before adding them to the top of the cookies.
Once you have the marshmallows on top of the baked cookies, return the tray to the oven and bake until the marshmallow begins to melt and spread; about 5 minutes. But watch closely because if the marshmallow spreads too much, you won't have the pretty cookie as seen here in these photos.
Remove the cookies from the baking tray to a cooling rack while you prepare the melted chocolate.
How to Drizzle the Melted Chocolate
While the cookies are cooling, melt the chocolate chips in the microwave in 30 second intervals until smooth and completely melted.
Drizzle the melted chocolate on top of each cookie. You can add the melted chocolate to a piping bag if you want. Another way to drizzle the chocolate is by dipping a spoon into the melted chocolate and then quickly "sweep" the melted chocolate over each cookie to get the desired look you want.
Top with the crushed peppermint candies.

Now! There's no need to bake the few days leading up to the holidays when you can easily freeze homemade cookies or even the cookie dough weeks before Christmas.
The best way to keep cookies fresh for Christmas is to store them properly in an air-tight container in the refrigerator or in a cool, dry place, such as the back shelf of your pantry. You can also flash freeze them on a baking tray until frozen solid. Then place them in containers or freezer safe plastic bags.
Properly packaged, you can store Christmas cookies in the freezer for up to six months.

Ingredients

- Bake in a preheated 350 degree oven for about 9 minutes.
- Remove the tray from the oven and immediately top each cookie with a marshmallow that's been cut in half.
- Return the tray to the oven and bake until the marshmallow begins to melt and spread; about 5 minutes.
- Allow the cookies to cool before removing to a wire rack.
- While the cookies are cooling, melt the chocolate chips in the microwave in 30 second intervals until smooth and completely melted.
- Drizzle the melted chocolate on top of each cookie.
- Top with the crushed peppermint candies.
