Can I make Puff Pastry Appetizers ahead of time?
Yes, you can and this is something I always do when preparing appetizers made with puff pastry to serve for a dinner or holiday celebration:
Refrigerate: Prepare the appetizer completely, including any fillings. Place them on a baking tray and cover tightly with plastic wrap. Refrigerate for several hours or even overnight.
Another option is to prepare all the components of the appetizer, such as the filling and prepare the pastry. Cover both with plastic wrap and refrigerate until it's time to assemble and bake. This option works great with appetizers that have fillings that might make the pastry soggy.
Freeze: You can also freeze unbaked puff pastry appetizers for up to 3 months. Bake from frozen, adding a few extra minutes for baking time.
Expert Tip
Chill your assembled puff pastry appetizers for at least 30 minutes before baking. This helps the butter solidify, preventing the pastry from shrinking and ensuring those beautiful, flaky layers puff up nicely.

Avoid overworking puff pastry dough, as this can toughen the final product. Make sure the dough and butter remain chilled before baking to achieve those desirable flaky layers.
Puff pastry should be kept chilled and used within 30-40 minutes of being at room temperature. This prevents the butter from melting and the gluten from over-relaxing, ensuring light, flaky layers.
