Growing one of my friend's mom made these delicious cookies that we usually devoured when she would bring them to a church function. Every New Years Eve we would go to their house for a get together and there would be plates and plates of these cookies all over the house for everyone to enjoy. Years later I found out she made the cookies from a cake mix!
Tips for Making Cake Mix Cookies
- Ignore the directions and extra ingredients that you normally would follow from the back of the cake mix.
- Instead, follow the directions listed the particular recipe you want to make.
- Do not over-mix the batter.
- If the batter is too soft, chill the dough for about 30 minutes before placing on baking trays.
- Use silicon baking mats or parchment baking sheets on the baking trays to keep the cookies from sticking.
- Do not over-bake the cookies!
Tips for Storing and Freezing Cake Mix Cookies
- Once baked, store the cake mix cookies in air-tight containers for up to two weeks.
- To freeze the cookies, simply place them in a single layer on a baking sheet and "flash freeze" them until they are solid, around 30 to 60 minutes. This will help keep the cookies from sticking to each other.
- Then place the cookies in an air-tight container with parchment or waxed paper in between each layer to keep the cookies from sticking to each other.
- You can freeze the cookies this way for up to 3 months.

If you don't have parchment paper or silicone cookie mats, can you just use some non stick cooking spray on the cookie sheet?
