Step-by-Step Instructions
Step 1: Beat together the butter, sugar, and vanilla extract until smooth. Then mix in the egg.
Step 2: Combine the dry ingredients together. Slowly add to the wet ingredients. Continue mixing until everything is combined.
Step 3: Using a cookie scoop, drop the cookie dough onto a parchment lined cookie sheet.
Step 4: Then using a drinking glass that's been sprayed with a little cooking spray, flatten each cookie.
Baking Instructions
Step 5: Bake for 7-8 minutes or until the centers are set. Allow the cookies to cool completely before icing them.
Sugar Cookie Icing
Step 6: Whisk the powdered sugar, milk, and vanilla extract together. Divide the icing into two small bowls.
Step 7: Add green food gel coloring to one bowl and red food gel coloring to the other bowl. Mix well until the desired color is reached.
Quick Tip
If you find the icing is too thick, add a little more milk. If it is too thin, add more powdered sugar.
Step 8: Dip the cooled cookies into the prepared icing. Place the cookies on a cooling rack that's placed on top of a baking tray so the icing can drip off the cookies.
Step 9: Before the icing hardens, sprinkle the crushed candies on top.

Storage Instructions
Room Temperature: Store the baked cookies in an airtight container with parchment paper layered in between the cookies so they don't stick together. They should stay fresh for about 7 days.
Freezer: You can freeze the cookies after they have baked and before frosting by placing the cookies on a baking tray lined with parchment paper. Place the tray in the freezer to flash freeze the cookies for about 30 minutes. Once the cookies are frozen, transfer to airtight storage containers and freeze up to 3 months.
Thaw: When you're ready to serve the cookies, remove from the freezer, allow them to defrost at room temperature. Follow the directions above for frosting.

Sugar Christmas Cookies
Ingredients
For the Cookies:
- ½ cup butter softened
- ⅔ cups granulated sugar
- ½ teaspoon vanilla extract
- 1 egg
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
For the Icing:
- 1 cup powdered sugar
- 1 ½ - 2 tablespoons milk
- ½ teaspoon vanilla extract
- red and green gel food coloring
- 6 round red candy mints crushed
- 6 round green candy mints crushed
Instructions
For the Cookies:
- Preheat oven to 400°F.
- In the bowl of a KitchenAid mixer, beat together the butter, granulated sugar, and vanilla extract until smooth.
- Add the egg and combine.
- Combine the flour, baking soda, baking powder, and salt together.
- Slowly add the dry ingredients to the wet ingredients.
- Beat until dough is combined.
- Using a cookie scoop, drop the cookie dough onto a parchment lined cookie sheet.
- Spray the bottom of a glass with non-stick cooking spray, and press each cookie until about ½ inch thick.
- Bake for 7-8 minutes or until the centers are set.
- Allow the cookies to cool completely before icing them.
Prepare the Frosting:
- Whisk the powdered sugar, milk, and vanilla extract together. If you find the icing is too thick, add a little more milk. If it is too thin, add more powdered sugar.
- Divide the icing into two small bowls. Add green food gel coloring to one bowl and red food gel coloring to the other bowl. Mix well until the desired color is reached.
Decorate the Cookies:
- Dip the cooled cookies into the prepared icing.
- Place the cookies on a cooling rack that's placed on top of a baking tray so the icing can drip off the cookies.
- Before the icing hardens, sprinkle the crushed candies on top.
