Making your own flatbread at home has never been easier - with just a few ingredients and some patience for the dough to rise, you can bake up a batch of warm bread in no time!
This recipe is different from my Easy Flatbread Recipe that doesn't have yeast in the dough. This recipe uses yeast and Greek yogurt!
Using Greek yogurt in the dough makes it light and fluffy while adding an extra boost of protein to each slice.

What is Flatbread?
Flatbread is a type of bread that is made with simple ingredients such as flour, water, salt, and sometimes yeast or baking powder.
It is called "flatbread" because it is thin and does not rise significantly during baking. They are cooked quickly at high temperatures, either in a cast iron skillet. I find my electric skillet works really well too!
What can you make with Flatbread?
You can use flatbread as a wrap for sandwiches. Simply fill it with your preferred proteins, vegetables, and spreads for a satisfying culinary experience on the go.
I love making this recipe and using it as a side dish for my Sausage and Peppers Recipe. My husband will use any leftovers the next day for a sandwich to bring with him to work.

Substitutions and Variations
- You could use my homemade garlic butter in place of the cilantro/parsley butter this recipe calls for.
Step-by-Step Instructions
Step 1: Mix together the warm water, sugar, and yeast, then let it proof. After a 5-minute wait, incorporate the milk, yogurt, flour, oil, garlic, baking powder, and salt. If employing a stand mixer, knead with the hook attachment for approximately 5 minutes, or if kneading manually, continue for about 10 minutes.
Step 2: Place the dough ball into a bowl coated with oil and cover it until it doubles in size.
Expert Tip
Use a thermometer to make sure the water is between 105°F and 115°F before adding the yeast.
Step 3: Partition the dough into 10 uniform pieces, then shape them into balls. Cover and let the dough rest for another 15 minutes. After the resting period, flatten each ball into an oval shape.
Step 4: Heat an iron skillet until preheated, then cook the flatbread until bubbles emerge on the surface. Turn it over and continue cooking for an additional minute on the opposite side.
Step 5: Continue the process until all the flatbread is cooked. Then, brush them with the parsley garlic butter and savor the deliciousness!
Serving Tips
Break off pieces of the flatbread and use for dips.

🍶Storage Tips
Store in an air-tight container or zip top bag on the counter for 3 days or in the fridge for up to a week.
❄️Freezing Tips
Flatbread freezes really well. Wrap tightly in foil or a zip top freezer bag with the air removed for up to 3 months.
Thawing and Reheating Tips
Remove the flatbread from the freezer the night before you plan on serving them.
Allow them to defrost in the refrigerator overnight.
Reheat in a 400°F oven for a couple of minutes if thawed or about 5 minutes if frozen.

Yeast Flatbread Recipe
Ingredients
- ¼ cup warm water
- 2 teaspoons granulated sugar
- 1 ½ teaspoons active dry yeast
- ¾ cup warm milk
- ¾ cup plain Greek yogurt
- ¼ cup vegetable oil
- 2 tablespoons garlic minced
- 4 cups flour plus extra for rolling out dough
- 1 teaspoon baking powder
- 1 teaspoon salt
For the Garlic Butter:
- 3 tablespoons butter melted
- 2 tablespoons garlic minced
- 2 teaspoons fresh chopped cilantro or parsley
Instructions
Prepare the Dough:
- Add the warm water, sugar, and yeast to a large bowl. Stir and mix. Allow the yeast to proof for about 5 minutes.
- After 5 minutes, add in your milk, yogurt, flour, oil, garlic, baking powder, and salt. Mix until fully incorporated.
- Knead with the dough hook for about 5 minutes on medium speed if using a stand mixer. If kneading by hand, transfer the dough ball to a lightly floured surface and knead for about 10 minutes.
- Transfer your dough ball to a lightly oiled bowl. Cover with a clean towel for 2 hours, or until doubled in size.
Prepare the Flatbread:
- Prepare a cast iron skillet (a non-stick skillet will be fine as well) by turning it on to medium low.
- Once the dough has doubled in size, remove the dough ball to a lightly floured surface. Divide the ball into 10 even sections.
- Take each section and roll it into a ball. Set aside and once you have rolled every section into a ball, cover with a clean kitchen towel. Allow them to rest for 15 minutes.
- Lightly dust a flat surface with flour. Using a rolling pin, roll the dough into an oval shape.
- Place the flatbread dough on top of the preheated skillet and cook on one side until you see bubbles appear on the surface. Flip and continue to cook for about one minute on the remaining side.
- Set aside and repeat steps 4-5.
- In a micorwave safe dish, melt the butter, then add in the garlic and parsley. Mix well.
- Brush the butter mixture on the top of the cooked flatbread.
- Serve and enjoy warm.
Notes
- Make sure the water is between 105°F-115°F to activate the yeast.
