Step 1: Combine the cake mix, eggs, vegetable oil, and mint extract. Add in the green food coloring.
Step 2: Add the mint baking chips.
Step 3: Add the white chocolate chips and mix to combine.

Storing and Thawing Tips
Refrigerator: Store the Mint Christmas Cookies in airtight containers for up to 2 weeks.
Freezer: Flash freeze the cookies by placing them in a single layer on a baking sheet and freeze for 30-60 minutes until solid. Add the cookies to a zip top freezer bag with parchment paper in between each layer to keep them from sticking to each other. Freeze for up to 3 months.
Thawing: Allow the cookies to thaw overnight in the refrigerator.

Ingredients
- 1 box vanilla cake mix
- 2 eggs
- ⅓ cup vegetable oil
- ½ tablespoon pure mint extract
- 1 cup mini white chocolate chips
- ¾ cup Andes Mint Baking Chips
- 8 - 10 drops green food coloring
- 1 - 2 cups powdered sugar for rolling the cookies in
For the Cookie Glaze:
- 1 cup powdered sugar
- 1 - 2 tablespoons milk
- Christmas sprinkles
Instructions
- In the bowl of a stand mixer, combine together the vanilla cake mix, eggs, vegetable oil, and mint extract.
- Once combined, add in the green food coloring. Start with 8 drops and add more to the color green you desire.
- Add in the mint baking chips and the mini white chocolate chips.
- Chill the dough for 30 minutes.
- Preheat the oven to 350°F and roll the cookie dough into balls.
- Dip the tops of the cookies into the powdered sugar and place on a parchment lined baking tray.
- Bake for 8-10 minutes.
- Let the cookies cool on the baking tray for at least 5 minutes before moving to a cooling rack.
- Once the cookies have cooled, prepare the cookie glaze by combining 1 cup powdered sugar with 1 tablespoon milk. If you need more milk, add the remaining tablespoon. You want to be able to drizzle the cookies with the glaze.
- Drizzle the glaze on top of the cooled cookies and immediately add the Christmas sprinkles.
