Preheat air fryer to 350°F. Place 4 tortillas with half the cheese in the basket. Air-fry cut tortilla strips 1–2 minutes until firm. Air-fry quesadillas 3–5 minutes until cheese melts and strips are golden, then add pre-fried strips and candy eyes while cheese is hot.
Electric Skillet Method
Heat skillet to medium. Place tortillas with cheese and arrange strips in a mummy design. Cover and cook 2–3 minutes per side until cheese melts. Add candy eyes and repeat, adjusting heat to prevent burning.

Step 1: Add cheese to half of the mini flour tortillas.
Step 2: Use a knife or pizza cutter to cut the remaining tortillas into strips. Place them on top of the cheese to create a mummy.
Step 3: Bake at 350°F for 5 minutes. Remove from the oven and immediately add the candy eyes to cheese so they will stick.
Step 4: As soon as the quesadillas come off the skillet/quesadilla maker, quickly place the candy eyes onto the melted cheese peeking through the "mummy" strips. The residual heat will help them adhere to the cheesy mummy face.

✔️ DO cut the tortilla strips a bit wider so they stay in place while baking and give the mummies a fun, bandaged look.
❌ DO NOT overfill the quesadillas—too much cheese will spill out and make the “bandages” slide off.

Cheeses that melt best are those that become creamy and gooey when heated. This includes Cheddar, Monterey Jack, Colby, Pepper Jack, Mozzarella, or a Mexican blend.
Add a small amount of oil, butter, or nonstick spray to the pan. Use just enough to coat the surface.
Use a nonstick pan, and cook on medium or medium-low heat. High heat can cause the tortilla to burn and stick before the cheese has a chance to melt properly.
Storage and Reheating Tips
Refrigerator: These are best served fresh, but you can keep them in the refrigerator to enjoy later if you have leftovers. Store in an airtight container for 3-4 days.
Freezer: Allow the quesadilla to cool completely before wrapping in plastic wrap. Add the wrapped quesadillas to a zip top freezer bag or airtight container to freeze for up to 2 months.
Thawing and Reheating: Thaw in the refrigerator overnight, or reheat from frozen in the oven or air fryer at 350°F until warmed through.

Cheesy Mummy Quesadillas

Ingredients
- 16 small flour tortillas (street taco size)
- 2 cups shredded cheddar cheese
- 16 candy eyes
Method
- Preheat the oven to 350°F.
- Lay 8 tortillas on a baking sheet. Divide the cheddar cheese evenly between all the tortillas. Set aside.
- Cut the remaining 8 tortillas into strips using a pizza cutter or sharp knife.
- Place the strips onto the cheese to create a mummy.
- Place in the oven for 5 minutes.
- Remove from the oven and immediately place 2 candy eyes on top of the cheese peeking through.
