All it takes to make these quick and easy cookies is a log of slice and bake refrigerator cookie dough, made up ahead of time, a bit of slicing to put the cookies onto the pan, and baking for about 10 minutes or according to the recipe.
This was inspired by my Freezer Friendly Slice and Bake Cookies on this site that are more of a shortbread cookie.

Step-by-Step Instructions
- Step 1: In the bowl of your KitchenAid mixer, add the butter. Cream until smooth and fluffy. Add the sugar to the butter.
- Step 2: Add the eggs one at a time, incorporating completely.
- Step 3: Add the vanilla extract and combine.
- Step 4: Finally add the dry ingredients.
- Step 5: Once the dough is combined, add the sprinkles. Keep the mixer on low!
- Step 6: Remove the dough from the bowl and divide it into three separate logs.
- Step 7: Wrap each log in plastic wrap and refrigerate for 3 hours or even overnight.
📌Baking Tip: Placing the dough in the refrigerator before baking will help chill the butter in the dough so they keep their shape while baking.
How to Slice and Form Cookies
- Remove the dough from the refrigerator.
- Slice the dough into ⅓ inch slices.
- Place on a baking sheet that's been lined with parchment paper.
- Gently flatten each cookie using the tart tamper.
Baking Instructions
- Bake in a preheated 375°F oven for 8 minutes.
- Allow the cookies to cool for a few minutes on the baking tray before removing them to a cooling rack to completely cool.

Recipe Variations
- Different Colored Sprinkles - change the sprinkles for different holidays or celebrations. Orange for Halloween, red and pink for Valentine's Day or red, white and blue for summer patriotic celebrations.
- Cookie Cutters - you could roll out this dough and cut out cute shapes using cookie cutters. Instead of shaping the dough into rolls, shape into discs and chill for about 30 minutes. Then roll out the dough and cut out shapes with your favorite cookie cutters.

Prep-Ahead Tips
- You can easily freeze the dough once you divide it into the three logs.
- Wrap the logs in plastic wrap.
- Then place the logs in a freezer safe plastic bag.
- Place the bag in the freezer...don't forget to label the bag with the date and name of cookie.
- This dough will remain fresh in the freezer for up to six months.
- When you're ready to bake, remove the log from the freezer and let it defrost for about 10 minutes before slicing. Continue with the baking steps above.
Storage Tips
- Store the baked cookies in an air-tight container in a dark cool place.
- You can also freeze the baked cookies by placing the cooled cookies on a baking tray in the freezer.
Top Recipe Tip
I recommend gently pressing the cookies using the tart tamper tool or the bottom of a small juice glass to make sure all the cookies are uniform in size and thickness.

Ingredients
