Recipe Notes
- Make sure you cream the butter, peanut butter and sugar together until they're light and fluffy. Creaming ingredients together incorporates air into the mixture which creates a tender and light texture.
- Beath the butter, peanut butter and sugar on medium-high speed for about 2-3 minutes before adding the dry ingredients.
- This recipe is part oatmeal cookie and peanut butter cookie! It uses old fashioned oats to mimic quick cooking oats, however, you need to is to break them down in the food processor. The old fashioned oats have a stronger oat flavor and provide great texture.
- Allow the baked cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. This allows the cookies to set and firm up before enjoying their warm, chewy goodness.
Can I use quick cooking oats instead of old fashioned oats?
You can! In fact, a way to get old fashioned oats to mimic quick cooking oats is to blitz them in the food processor like we do in the recipe. The old fashioned oats have a stronger oat flavor and provide great texture.

Storing Freezing and Prep Ahead Tips
Refrigerator: Keep leftover cookies in an air-tight container at room temperature for a few days. You can also store them in the refrigerator for up to a week.
Freezer: Allow the cookies to cool completely before freezing the cookies in a single layer on a baking sheet until firm. This will take about an hour. Once the cookies are firm, transfer them to a zip top freezer bag for up to 3 months.
Prep Ahead Tips: You can also freeze the dough by following the same instructions, so you can grab a few dough balls out when you're ready to bake a sweet treat.
