Tips for Perfect Cookies
- Make sure the butter and eggs are room temperature to make sure they combine together smoothly.
- I like to use an ice cream scoop to portion out the dough. Having the cookies all the same size will help make sure they bake evenly and at the same time.
- Use parchment paper to line the baking sheets. Don't overcrowd the baking sheets. Give the cookies room to spread.
- Always, always, always chill the dough before baking. I like to scoop the dough all out on baking sheets and then refrigerate for at least 30 minutes to even overnight before baking.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

While butter is best for flavor and texture, using stick margarine with a high fat content can work in a pinch. Just keep a close eye on your cookies as they bake, since margarine may affect their spread and baking time.
Grainy chocolate chip cookies are often caused by insufficient creaming of butter and sugar or using too much flour. To avoid this, cream the butter and sugar thoroughly and measure flour accurately, ensuring proper chilling time for the dough.
Storage and Thawing Instructions
Refrigerate: Once cooled, store your cookies in an airtight container at room temperature to maintain freshness. This will keep them chewy and delicious for several days.
Freezer: To freeze your cookies, first freeze them individually on a baking sheet until solid. Then, transfer them to a freezer-safe container for long-term storage, where they'll stay fresh for up to 3 months.
Thawing: Allow the cookies to thaw overnight in the refrigerator before enjoying.
