Step 1: Sauté onions in olive oil over medium low heat.

Step 3: Once the mushrooms have softened, add in the steak and the steak seasoning.

Step 4: Cook until the steak is cooked through, tossing with the onions and mushrooms.

Step 5: Add mayo and cheese to the hoagie buns.

Step 6: Pile on the steak, onions, and mushrooms.

Step 7: Toast in the air fryer at 350°F or for a couple of minutes or in the oven for 5-8 minutes. You can also bake it in the oven fo 5-8 minutes.
Insider Tips from My Kitchen to Yours
✔️ DO cook the onions, peppers, and mushrooms low and slow so they caramelize and deepen in flavor before adding them to the sandwich.
❌ DO NOT skip melting the cheese at the end; rushing this step keeps the sandwich from coming together the way it should.

Storing, Freezing, Thawing and Reheating Tips
Refrigerator: Place the leftover sandwich in an airtight container or wrap well in aluminum foil. Refrigerate for up to 3 days.
Reheating: Wrap the sandwich in aluminum foil to keep the sandwich from drying out and air fry (or bake) at 350°F for 5-8 minutes depending on how thick the sandwich is.
Freezer: I would not freeze the sandwich as a whole, but you can freeze the leftover cooked steak also in an airtight container for up to 3 months.
Thawing: Allow the frozen steak to defrost in the refrigerator overnight and follow the directions for putting the sandwiches together when defrosted.

I usually wipe mushrooms with a damp paper towel or use a mushroom brush to avoid excess moisture, but if they’re very dirty, a quick rinse and immediate dry works too. Trim the stems, and remember—store-bought mushrooms need minimal cleaning, while wild ones may need more attention.
A yellow onions' texture and flavor makes them ideal for sautéing and caramelizing.

Method
- In a large skillet, heat the oil with the onions, Saute on medium low heat until they become soft and translucent.
- Once the onions are sautéed, add in the mushrooms and season with salt. This helps bring the moisture out of them to become soft as well as seasons them.
- Once the mushrooms are soft, add in the shaved steak along with 2-3 tablespoons of your favorite steak seasoning.
- Cook the steak until it's cooked through, about 8-10 minutes. Toss the steak around in the onions and mushrooms.
- Spread mayo on the hoagie buns then place steak on the bottom roll and the provolone cheese on the top.
- Place in the air fryer at 350°F (or in the oven) to toast the bread and melt the cheese. In the air fryer it'll take about 1-2 minutes and about 5-8 in the oven.

Notes
- Add the Onions and Peppers: Cooking onions and peppers slowly brings out their natural sweetness and adds rich depth to the sandwich. Let them soften over low heat for the best flavor.
- Salt the Mushrooms Early: A sprinkle of salt helps release the mushrooms' moisture, making them tender and enhancing their savory taste as they cook.
- Finish with Melty Cheese: After building the sandwich, use your air fryer or broiler to melt the cheese and give the bread a lightly toasted finish—it only takes a couple of minutes
- Reheating Tips: Wrap the sandwich in aluminum foil to keep the sandwich from drying out and air fry (or bake) at 350°F for 5-8 minutes depending on how thick the sandwich is.
