Let me show you how easy this copycat recipe is to make in your very own kitchen. 

Those Thin Mint Girl Scout cookies are seriously addictive! (Who hasn't devoured a whole box in a day or two?) But guess what? It's surprisingly easy to make them at home!

I mean, these cookies are so good, you may never need to answer that doorbell again...well, unless you're a fan of their other cookie flavors.

Semi-Homemade Recipe

I'm a huge fan of anything chocolate and mint. These cookies satisfy that craving for me and I know they will for you as well.

They're made with Andes' Thin Mint Baking Chips, however, you can easily make the melted chocolate mint on your own. 

I was also very surprised to learn that the semi-homemade thin mint cookies are made with buttery Ritz crackers dipped in melted chocolate. Who knew? 

Where Can I Buy Thin Mint Chips? 

I went to quite a few stores before I found the Andes' Thin Mint Baking Chips. All I had to do was wait until the week before Christmas for them to appear in my local grocery store. You can also purchase them online through Amazon.

Main Ingredients Needed

Step-by-Step Directions

Step 1: Melt the mint chips. Dip the crackers one at a time, or in small batches, ensuring sufficient space in the bowl. Use a fork to lift each cracker and tap off excess chocolate.

Lay Flat to Harden

Step 2: Gently place each chocolate covered cracker on a baking tray that's been lined with parchment baking sheets. Place the cookies in the refrigerator to set quickly or you can leave them on the counter at room temperature until they are completely hardened. 

How to Decorate the Cookies

Step 3: Place a few squares of white chocolate almond bark or white chocolate candy melts in a microwave safe bowl. Melt in 30 second increments, stirring after each time until the chocolate is completely melted and smooth. 

Expert Tip

Use decorating bottles for precise chocolate drizzling. Fill bottles using a funnel. Drizzle back and forth over cookies.

Step 4: To achieve those thin chocolate lines, fill a decorating bottle with melted chocolate using a funnel. Then, simply drizzle the chocolate over the cookies by moving the bottle back and forth.

Storing and Thawing Tips

Refrigerator: Once the cookies have hardened completely, layer them in an airtight container between layers of parchment baking sheets.

Freezer: Flash freeze them first on a parchment line baking sheet for about 30 minutes. Once the cookies are frozen, remove from the baking tray and place in either a freezer-safe container or freezer-safe plastic bag. Again, you should layer the cookies between parchment paper. 

Thawing: Allow the cookies to come to defrost overnight in the refrigerator.

Method

 

1. Line a baking sheet with parchment paper. Set aside.
2. In a microwaveable safe bowl, melt the chips in 30 second increments, stirring after each increment until completely melted and smooth.
3. Begin dipping the crackers into the melted chocolate being careful not to over-crowd the bowl.
4. Use a fork to lift the cracker out of the melted chocolate and then gently tap the fork on the side of the bowl for the excess chocolate to fall off the cracker.
5. Place the cracker on the baking sheet that's been lined with parchment paper and allow to harden completely.
6. Drizzle white melted chocolate on top to decorate.

Notes

If you can't find the mint chips, you can make chocolate flavored with mint yourself by melting chocolate candy melts according to the label directions. Then stir in ¼ teaspoon mint extract or peppermint extract.

Taste the melted chocolate to make sure it tastes minty enough for you.
