This is an updated recipe from two years ago. The original recipe that I shared used dehydrated marshmallows that were getting difficult to find...and pricey!
This festive treat is made with hot cocoa powder mix, chocolate chips, and then topped with an oven-toasted marshmallow, giving it a rich flavor that is sure to please.

What are marshmallow bits?
Marshmallow Bits can be difficult to find! I had quite a few of you email me saying you wanted to try the recipe but couldn't find the marshmallow bits.
If you're looking in the grocery store, they might be near the hot chocolate or coffee/tea aisle. You can also find them on Amazon, but they are a bit pricey.
Which is why the recipe now calls for regular sized marshmallows!

How to wrap cookie trays
Start by laying out a length of cellophane wrap on a flat surface. Place the cookie tray in the center of the wrap. Then, bring the long edges of the cellophane up and over the tray, using enough pressure to conform the cellophane to the tray without crushing the cookies.
Once the cellophane is in place, use tape to secure it in place. Finally, cut a length of ribbon and tie it around the cellophane, making sure to secure it with a strong knot.
Trim any excess ribbon, and your cookie tray is ready to go! Try these fun trays when giving cookies as gifts!

Step-by-Step Instructions
Step 1: Mix the sugars with the vegetable oil until well combined.
Step 2: Next, incorporate the egg and vanilla extract. Mix well.
Step 3: Blend the dry ingredients together in a separate bowl and slowly add them to the wet ingredients. Do not add the hot chocolate mix yet.
Step 4: Next, include the hot cocoa mix. Make sure it's mixed together well.
Step 5: Gently incorporate the chocolate chips into the mixture.
Step 6: Cover the bowl with plastic wrap and refrigerate for 30 minutes.
Step 7: Scoop the chilled dough onto a baking tray lined with parchment paper.
Baking Instructions
Step 8: After baking for 9 minutes, take the baking tray out of the oven and place one marshmallow atop each cookie. Then put the baking tray back in the oven and bake for an extra 3 minutes.
Quick Tip
Make sure you use fresh marshmallows. That way you can be sure they will melt and be soft as they heat up in the oven.
Step 9: Take out from the oven and let cool before indulging!

Storage Tips
Store the baked cookies in an airtight container in a dark cool place.
Don’t stack the cookies or they will stick together. Layer parchment paper in between the layers of cookies. They should stay fresh for about 3 days.
Freezing Tips
I do not recommend freezing this cookie after it has baked. The marshmallows will not freeze correctly.
You could, however, freeze the cookie dough before baking by scooping dough balls onto a baking tray with parchment paper. Place the baking tray in the freezer to "flash freeze" for about 30 minutes.
Once the cookie dough balls are frozen, place them in a freezer-safe container or plastic bag. The cookies will last for 3 months in the freezer.
When you're ready to bake the cookies, remove them from the freezer and place on a baking tray. Follow the baking steps in the recipe card.
How far in advance can you freeze Christmas cookies?
You can store baked cookies and even dough in the freezer for up to six months!
What is the best way to freeze cookies?
First you need to make sure the cookies are completely cooled before freezing. Then place them in a single layer on a baking sheet that's been lined with parchment paper. Next, add the baking tray to the freezer to "flash freeze" the cookies. This usually takes about 30 minutes. Then place the cookies in a freezer safe bag or plastic container.

Hot Chocolate Marshmallow Cookies
Ingredients
- ¾ cup vegetable oil
- 1 cup granulated sugar
- ⅔ cup brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 3¼ cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- ¾ cup hot cocoa powder
- 1 cup semi-sweet chocolate chips
- 18 Jumbo marshmallows
Instructions
- In a stand mixer or with a hand mixer, beat the vegetable oil and both the granulated sugar and brown sugar until combined.
- Add in the eggs and vanilla extract. Mix until fully incorporated.
- Combine the dry ingredients together except the hot cocoa powder.
- Add the dry ingredients to the mixing bowl a little at a time until all the flour is fully incorporated. Then add in the hot cocoa powder. Mix until fully incorporated.
- Fold in the chocolate chips.
- Cover with plastic wrap and chill in the refrigerator for 30 minutes.
- Preheat the oven to 350°F.
- Line a baking tray with parchment paper and begin scooping the cookie dough on top; about 3 tablespoons of dough for each cookie leaving 2 inches of space between each cookie.
- Bake for 9 minutes. Then remove the baking tray from the oven and place a marshmallow on top of each cookie.
- Return the baking tray to the oven and bake for an additional 3 minutes.
- Remove from tray and allow to continue to cool on a cookie rack.
Notes
- ¾ cup hot cocoa powder is 4 packages.
- Do not use diet hot cocoa mix.
