💭What are marshmallow bits?
This is where the recipe has changed. Marshmallow Bits can be difficult to find! I had quite a few of you email me saying you wanted to try the recipe but couldn't find the marshmallow bits.
If you're looking in the grocery store, they might be near the hot chocolate or coffee/tea aisle. You can also find them on Amazon, but they are a bit pricey.
Which is why the recipe now calls for regular sized marshmallows.

💭How to wrap cookie trays
Christmas is a time for baking cookies! But once the cookies are baked, how do you package them so they'll stay fresh and look nice for gift giving? Here's what you'll need to wrap cookie trays to give as gifts:
- Christmas-themed cellophane wrap
- Christmas-themed ribbon
- Tape
Start by laying out a length of cellophane wrap on a flat surface. Place the cookie tray in the center of the wrap. Then, bring the long edges of the cellophane up and over the tray, using enough pressure to conform the cellophane to the tray without crushing the cookies.
Once the cellophane is in place, use tape to secure it in place. Finally, cut a length of ribbon and tie it around the cellophane, making sure to secure it with a strong knot. Trim any excess ribbon, and your cookie tray is ready to go!

- Granulated Sugar
- Brown Sugar
- Eggs
- Pure Vanilla Extract

- ¾ cup of hot cocoa mix.
- Salt
- Baking soda
- Baking powder
- Semi-sweet chocolate chips
- 18 Jumbo marshmallows
Step-by-Step Instructions
Step 1 | Combine the Ingredients
- Combine together the sugars with the vegetable oil.
- Then add the egg and vanilla extract.
- In a separate bowl, combine together the dry ingredients except for the hot cocoa mix. Mix in the dry ingredients.
- Then add in the hot cocoa mix. Make sure it is fully combined.
- Fold in the chocolate chips.
Step 2 | Chill the Dough
- Wrap the bowl with plastic wrap and chill for 30 minutes.
- Scoop the chilled dough onto a baking tray lined with parchment paper.
Step 3 | Baking Instructions
- Bake for 9 minutes and then remove the baking tray from the oven and place a marshmallow on top of each cookies.
- Return the baking tray back to the oven and bake for an additional 3 minutes.
- Remove from the oven and allow to cool before enjoying!
Baking Tip: Make sure you use fresh marshmallows. That way you can be sure they will melt and be soft as they heat up in the oven.

- Store the baked cookies in an air-tight container in a dark cool place.
- Don’t stack the cookies or they will stick together. Layer parchment paper in between the layers of cookies.
- They should stay fresh for about 3 days.

💭Freezing Tips
- I do not recommend freezing this cookie after it has baked. The marshmallows will not freeze correctly.
- You could freeze the cookie dough before baking by scooping dough balls onto a baking tray with parchment paper. Place the baking tray in the freezer to "flash freeze" for about 30 minutes.
- Once the cookie dough balls are frozen, place them in a freezer-safe container or plastic bag. The cookies will last for 3 months in the freezer.
- When you're ready to bake the cookies, remove them from the freezer and place on a baking tray. Follow the baking steps in the recipe card.

First you need to make sure the cookies are completely cooled before freezing. Then place them in a single layer on a baking sheet that's been lined with parchment paper. Next, add the baking tray to the freezer to "flash freeze" the cookies. This usually takes about 30 minutes. Then place the cookies in a freezer safe bag or plastic container.

Hot Chocolate Marshmallow Cookies - made with hot chocolate mix blended right into the cookie dough! Who knew that by adding hot cocoa mix to a cookie batter you’d get such a delicious tasting cookie?
Ingredients
- ¾ cup vegetable oil
- 1 cup granulated sugar
- ⅔ cup brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 3¼ cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- ¾ cup hot cocoa powder
- 1 cup semi-sweet chocolate chips
- 18 Jumbo marshmallows
Instructions
- In a stand mixer or with a hand mixer, beat the vegetable oil and both the granulated sugar and brown sugar until combined.
- Add in the eggs and vanilla extract. Mix until fully incorporated.
- Combine the dry ingredients together except the hot cocoa powder.
- Add the dry ingredients to the mixing bowl a little at a time until all the flour is fully incorporated. Then add in the hot cocoa powder. Mix until fully incorporated.
- Fold in the chocolate chips.
- Cover with plastic wrap and chill in the refrigerator for 30 minutes.
- Preheat the oven to 350°F.
- Line a baking tray with parchment paper and begin scooping the cookie dough on top; about 3 tablespoons of dough for each cookie leaving 2 inches of space between each cookie.
- Bake for 9 minutes. Then remove the baking tray from the oven and place a marshmallow on top of each cookie.
- Return the baking tray to the oven and bake for an additional 3 minutes.
- Remove from tray and allow to continue to cool on a cookie rack.
Notes
- ¾ cup hot cocoa powder is 4 packages.
- Do not use diet hot cocoa mix.
