Recipe Notes
There are so many ways you can make this recipe your own. Switch up the ingredients to make them your own by adding vegetables, different breakfast meats, or different cheeses.
Serve these mini pizzas hot, straight out of the oven for the best texture and flavor. They make a great breakfast for dinner option, but are also perfect for brunch gatherings or a hearty snack.
Can I make these Breakfast Pizza Rolls ahead of time?
Yes, you can prepare the components (bake the biscuits, cook the sausage, and scramble the eggs) ahead of time and store them separately in the refrigerator. When ready to serve, assemble the pizzas and bake them until the cheese is melted.
How can I make the gravy from scratch?
Melt 2 tablespoons of butter in a saucepan, stir in 2 tablespoons of flour, and cook for 1-2 minutes. Gradually whisk in 1 ½ cups of milk and cook until thickened. Season with salt and pepper to taste.

📋Ingredients
This is an overview of the ingredients and instructions. Be sure to see the recipe card below for exact quantities, detailed instructions and special notes.
Substitutions and Variations
I used canned biscuits for the convenience, but you could also roll out homemade biscuit dough.
You could add vegetables bell peppers, onions, or spinach for added nutrition and flavor. You can also add a dash of hot sauce or red pepper flakes for a spicy kick.
Change the breakfast meats to your liking. Bacon or Canadian Bacon/breakfast ham would be great substitutions.
While cheddar cheese adds a classic flavor, feel free to experiment with other types of cheese such as mozzarella, pepper jack, or gouda for a unique twist.
Step-by-Step Instructions
Step 1: Roll each biscuit out flat. You can use a pastry roller or a rolling pin.
Step 2: Transfer them to a baking pan lined with parchment paper, and bake at 375°F for about 12 minutes.
- High Quality --- Rolling pin is made of 100 percent of food-grade 304 stainless steel. Elegant and stylish, high-grade satin brushed stainless steel finish for long life, very easy to clean. The stainless steel dough roller is so smooth to surprise you.
Step 3: Prepare the other ingredients while the biscuits are baking. Prepare the gravy according to package directions.
Step 4: Brown the sausage then transfer to a paper towel lined plate to drain.
Quick Tip
To achieve fluffy scrambled eggs, cook them over low heat and stir constantly. This prevents them from becoming dry and overcooked.
Step 5: Whisk the eggs and milk together then scramble the eggs with salt and pepper.
Step 7: Add crumbled sausage on top of the gravy. If you want, you could add cooked bacon as well!
Step 6: Once the biscuits are done baking, spread a thin layer of gravy on each one.
Step 8: Fill each biscuit with a generous portion of fluffy scrambled eggs. This protein-packed addition creates a hearty and satisfying breakfast option.
Baking Instructions
Step 9: Top each pizza with shredded cheddar cheese. You can also use white cheddar or swiss cheese.
Step 10: Bake for an additional 5-8 minutes until warmed through and the cheese is melted.
What to Serve with
These pizzas are quite filling on their own, but you can serve them with a side of fresh fruit or yogurt to round out the meal. Try my Breakfast Parfaits with granola.
