- We used Rice Chex Mix cereal, mainly for the color, but feel free to use your favorite variety like Multi-Grain or Honey Nut. Or try a combination!
- When baking make sure you use a low temperature for a longer time to make sure that the cereal gets crispy without burning.
- Just like with my Homemade Granola Recipe, don't forget to stir every 15-20 minutes to make sure nothing is sticking and everything bakes evenly.
- Allow the snack mix to cool completely before storing in an airtight container. Keep it at room temperature which will help keep it fresh and crunchy.

Step-by-Step Instructions
Step 1: Break the almond bark into pieces, and place into a microwave safe bowl.
Step 2: Microwave in 15 second intervals, stirring in between until completely melted. Stir in the peppermint extract.

Candy Cane Chex Mix

- 12 ounces Rice Chex Cereal
- 24 ounces white almond bark candy coating
- ½ cup crushed peppermint candies
- ¼ teaspoon peppermint extract
Instructions
- Break the bark into pieces and place in a microwave safe bowl. Microwave until melted, stirring every 15 seconds.
- When the almond bark is completely melted, add in the peppermint extract and stir.
- Pour cereal into the largest bowl you have. Pour the melted chocolate over the cereal and stir to make sure everything is coated.
- Add the crushed peppermints and stir once again. If you want to use sprinkles, add them now.
- Place parchment paper down on the counter or tray and spread all the cereal out on the paper and let harden for about 10 minutes. Enjoy!
