- Fresh berries with powdered sugar
- Apple pie filling with cinnamon

Substitutions and Variations
You can easily adjust this recipe based on what you have on hand or how you plan to serve them:
- Milk: You can use whole milk, 2%, or even a dairy-free option like almond milk.
- Butter: Melted butter adds flavor, but you can substitute with a neutral oil if needed.
- Vanilla: Optional, but recommended only for sweet crepes. You can leave it out for savory fillings.
- Gluten-Free Option: A 1:1 gluten-free flour blend should work well in place of all-purpose flour.

Step 1: Combine all the ingredients in a blender and mix for 20-30 seconds until smooth.

Step 3: Heat the crepe pan over medium heat with additional butter.

Step 4: Coat the pan in a thin amount of batter and cook for 1 minute.
Don’t Worry About the First Crepe!
If it doesn’t turn out perfect, that’s okay. I call it the “cook’s treat.”
I like to sprinkle a little sugar on top, roll it up, and enjoy it as a quick snack while cooking the rest of the batter.

Step 5: Flip and cook for about 30 more seconds. Repeat with the remaining batter.
Insider Tips from My Kitchen to Yours
✔️ DO use the same amount of batter for each crepe and quickly tilt the pan so it spreads into a thin, even layer.
❌ DO NOT use too much batter or skip tilting the pan, or you’ll end up with thick, uneven crepes that are harder to flip.

Storage & Prep Ahead Tips
Refrigerate: Store leftover crepes stacked with parchment or waxed paper between each one to prevent sticking. Cover tightly and refrigerate for up to 2 days.
Freezer: Crepes can be frozen. Stack with parchment paper between each crepe, wrap tightly in plastic wrap, and place in a freezer-safe bag for up to 2 months.
Thaw and Reheat: Thaw overnight in the refrigerator. Warm briefly in a nonstick pan over low heat or in the microwave for a few seconds until soft.
Prep Ahead: Crepes can be prepared a day before serving or filling. Stack them on a plate with waxed or parchment paper between each crepe, cover tightly with plastic wrap, and store in the refrigerator overnight.

This usually happens if the crepe is too thin or hasn’t cooked long enough. Let it set fully before flipping and use a small nonstick pan for best results.
Crepes can stick if the pan isn’t fully preheated or lightly greased. Use a nonstick pan and add a small amount of butter before each crepe. Also make sure the crepe has cooked long enough before trying to flip it, as it will release more easily once set.
Letting the batter rest for about 30 minutes helps the flour fully hydrate, which makes the crepes smoother and easier to work with.

Notes
Tips
- Use a small nonstick pan and the same amount of batter for each crepe.
- Immediately lift and tilt the pan so the batter spreads into a thin, even layer.
- Keep the heat at medium to medium-low. If the pan is too hot, the crepes will cook too quickly and become difficult to flip.
- For the best texture, let the batter rest for 30 minutes before cooking so the crepes turn out smooth and tender.
- This recipe works for both sweet and savory fillings: add vanilla for sweet crepes or leave it out for savory dishes.
Storage & Make Ahead
- Crepes can be made a day in advance and stored stacked with parchment paper between each one.
- Cover tightly and refrigerate until ready to use.
- To serve, warm gently in a nonstick pan or microwave just until soft and pliable.
