For the Waffles
- 1 package active dry yeast
- ½ cup warm water - 110 to 115 degrees
- 1 teaspoon sugar
- 2 cups warm whole milk - 110 to 115 degrees
- ½ cup melted butter
- 2 eggs
- 2 ¾ cups flour
- 1 teaspoon salt
- ½ teaspoon baking soda
Ingredients for the Pecan Praline Topping
- 2 tablespoon butter
- 1 cup chopped pecans
- ¼ cup brown sugar
- 2 tablespoon water
- 1 teaspoon cinnamon
- 1 teaspoon salt
Directions
Step 1 | Prepare the Waffle Batter
- In a small bowl, dissolve the yeast in warm water. Add sugar and cover the bowl with a plate and let sit for about 5 minutes or until the yeast starts to foam.
- In a separate larger bowl add the milk, butter and eggs and mix well. Add the yeast mixture.
- You don't even need an electric mixer to make this recipe! Just combine everything in one bowl using a wooden spoon, add the yeast mixture and then combine well before covering and refrigerating overnight.
Step 2 | Remove from the Refrigerator
- In the morning, take the bowl out of the refrigerator and then stir in the ½ teaspoon of baking soda.
- The batter will be stiff.
Step 3 | Waffle Iron Instructions
- After the waffle iron has heated, spray it with non-stick cooking spray, brushing with melted butter works too.
- Add about one cup of the batter to the waffle maker, close the lid and then flip!
Step 4 | How long to Cook Waffles
- I found baking them for about 5 minutes gave me the perfectly cooked waffle.
Look how delicious and thick! But the best thing is they are light and crispy at the same time all due to using yeast in the batter.
Directions for the Pecan Praline Topping
- In a small saucepan, melt the butter and add in the pecans, stirring gently for a few minutes.
- Add the brown sugar, cinnamon and water.
- Cook until the brown sugar has completely dissolved.
- Keep warm until the waffles are ready to be served.
Tips for Keeping Waffles Warm before Serving:
If you need to wait a little while before serving the waffles, you can keep them warm by following these easy steps:
- Preheat the oven to 200 degrees while you're making the waffles.
- As you remove the waffles from the waffle maker, place them on top of a baking rack that's been placed over a baking sheet lined with parchment paper.
- You can keep them warm in the oven for up to 20 minutes or so before serving.
Tips for Making Yeast Waffles
- Make sure you use a big bowl. Maybe even your biggest bowl. The batter will double by morning, so you don't want to wake up to a mess in the refrigerator. I like to use my large batter bowl because it has a lid to make sure the batter doesn't overflow.
- Before pouring batter into grids, always spray them with a small amount of nonstick cooking spray.
- Waffle color and crispiness are determined by the temperature of the grids, so the higher the temperature, the browner and crisper the waffle.
- If the cover of the waffle maker doesn’t lift up easily, let your waffle cook a little longer before lifting the lid again.
- To store waffles for later reheating, pack in airtight container and keep in the refrigerator or freezer.
How to Freeze and Reheat Homemade Waffles
This recipe will make 6 Belgium waffles so you might have leftovers. Don't worry, you can freeze the waffles to use at another time.
Freezing Waffles:
- Line a baking sheet with parchment paper.
- Lay the uneaten waffles on top of the parchment paper in a single layer with a little space in between each waffle.
- Place the baking sheet in the freezer for about 45 minutes or until the waffles are frozen solid.
- Remove the waffles from the baking sheet and place inside a freezer safe plastic bag.
- Label the bags with the date and place in the freezer for up to three months.
Reheating Waffles:
- Preheat the oven to 350F.
- Line a baking sheet with parchment paper and place a wire baking rack on top.
- Remove the desired number of waffles from the freezer and place the waffles on top of the baking rack that's been lightly sprayed with non-stick cooking spray. You can lay the waffles directly on the baking sheet, but placing them on top of a baking rack helps the heat from the oven circulate around the waffles making sure they crisp up evenly.
- Place in the oven for about 10 to 15 minutes or until the waffles are hot and crispy.
- Serve with butter and warm syrup.

- Bake for 5 minutes before gently removing and placing on a baking rack to cool slightly before enjoying with butter and syrup.
How to Make the Pecan Praline Topping:
- in a small saucepan, melt the butter and add in the pecans, stirring gently for a few minutes.
- Add the brown sugar, cinnamon and water.
- Cook until the brown sugar has completely dissolved.
- Keep warm until the waffles are ready to be served.
