When I was first married I would melt chocolate using the double boiler method. And while that works great, if you get water anywhere near the chocolate, the chocolate is ruined and you need to start again.

How do you melt chocolate for dipping?
My favorite method for melting chocolate is to use the microwave. You don't have to worry about accidentally getting water in the bowl and ruining the chocolate. Here are my favorite products to use for melting chocolate:
Step 1: Use Almond Bark
Almond Bark is a combination of cocoa butter with vegetable oil mixed with coloring and flavoring. It's sold in blocks and was at first used to make "almond bark candy."
If you look closely at the packaging, you'll see the tiny words, "Make your own" above the big words, "Almond Bark."

Step 2: Use Candy Melting Chips
Another easy way to melt chocolate is to use candy melting chips. They come in a variety of colors too.

Directions for Melting Almond Bark or Candy Melting Chips
- Begin by placing the almond bark or candy melting chips in a microwave-safe bowl and place the bowl in the microwave using the low setting and starting out in 30 seconds intervals.
- Remove the bowl from the microwave and stir the chocolate. One of the biggest mistakes people make with using the microwave is, they forget to stir the chocolate after each interval. Chocolate pieces can retain their shape until you stir them.
- If you don't stir, you risk burning the chocolate.
- Return the chocolate back to the microwave and repeat with another 10 to 15 seconds until the chocolate is completely melted.
- In just a few minutes you'll have perfectly beautiful melted chocolate for dipping.
