🥣Step-by-Step Instructions
Step 1: Start by whipping cream in your KitchenAid mixer; transfer it to a clean bowl while you prepare the cheesecake mixture. Gently fold the whipped cream into the cheesecake mixture until combined. Fill a piping bag fitted with a star tip with the mixture and set it aside while you prepare the strawberries.
Step 2: Slice each strawberry in half lengthwise, keeping the stem intact for a prettier presentation. Then, using a small spoon or strawberry huller, carefully hollow out the middle of each half without going too deep.
Step 3: Pipe the cream cheese mixture into each sliced strawberry half. If you don't have a piping bag, use a plastic bag with the end cut off.
Step 4: Sprinkle each strawberry half with the graham cracker crumbs.

Top Tip
Depending on how big your strawberries are, you might be able to fill more than 20 strawberries.
You might find it easier to trim the bottom of each strawberries half so they sit on the plate without falling over. Try it out with a few of the strawberries and see if you need to trim the bottoms before filling them with the cheesecake mixture.
You might also have an extra cheesecake mixture left over. I didn't find that to be a problem at all and enjoyed the leftover mixture as my little treat for the day.
Storage Tips
Any leftovers need to be refrigerated immediately due to the cream cheese filling. Store them in a single layer within an airtight container lined with paper towels to absorb moisture.
For the best texture and flavor, enjoy them within 1-2 days, as the graham cracker topping may soften slightly over time.

Cheesecake Stuffed Strawberries
Equipment

- 20 large strawberries
- 8 ounce cream cheese softened
- 1 cup heavy whipping cream
- ⅓ cup plain Greek yogurt
- ⅔ cup sugar
- 1 teaspoon vanilla extract
- ¼ cup graham cracker crumbs
Instructions
- Prepare the strawberries by washing and drying completely.
- Slice each strawberry in half being careful to keep the stem in place.
- Then using a small spoon or a strawberry huller, hollow out the middle of each strawberry half being very careful not to go too deep.
- Set the strawberries aside while you prepare the cheesecake mixture.
- Place the heavy whipping cream in the bowl of your Kitchen Aid mixer and using the wire whisk attachment, beat the whipping cream until stiff peaks form.
- Transfer the whipped cream to another bowl and prepare the cheesecake mixture.
- Place the softened cream cheese, plain Greek yogurt, sugar and vanilla extract in the bowl of your Kitchen Aid mixer and beat until smooth.
- Fold the whipped cream into the cream cheese mixture until all is combined.
- Add the whipped cream and cheesecake mixture to a piping bag that's been fitted with the star tip.
- Pipe the cream cheese mixture into each sliced strawberry half.
- Sprinkle each strawberry half with the graham cracker crumbs.
- Refrigerate until ready to serve.
