Recipe Substitutions and Variations
- Tater Tots - you'll need a 32-ounce bag of tater tots that you can find in the freezer section. Keep them frozen until you put them on top of the casserole or they won’t bake up as crispy.
- Breakfast Sausage or Bulk Sausage - which is simply sausage that that has not been made into links. For this recipe I used Jimmy Dean. You can replace the sausage with diced ham or cooked, crumbled bacon.
- Add some veggies like diced onions and bell peppers.

Step-by-Step Instructions
Step 1: Whisk the eggs, half and half, garlic powder, salt, and pepper until combined. Cook the sausage until no longer pink, then drain the grease.
Step 2: Grease a 9x13 baking dish, and spread the sausage in an even layer over the bottom of the dish. Pour the egg mixture over the sausage. Add the cheese, then add the tater tots evenly on top of the mixture.
Step 3: Bake the casserole for about 50 minutes. Once it's done baking, remove from the oven and let it sit for 5 minutes. Serve and enjoy!

- A glass 9x13 baking dish works best for this recipe.
- Be sure to spray your baking dish with cooking spray so the eggs don't stick!
- Check to see if the casserole is done by inserting a knife in the middle. When it comes out clean, it's ready!

Prep Ahead Tips
- You can easily assemble the breakfast casserole according the night before, however, don't add the tater tots to the top.
- After you have the recipe put together, tightly cover it with plastic wrap. You can either place it in the refrigerator for up to 24 hours or freeze for 2 months.
- When ready to bake, remove the casserole dish from the refrigerator and allow the dish to come to room temperature while the oven preheats.
- Place the tater tots on top of the casserole right before baking.
- If you have frozen the casserole, remove it from the freezer the day before you plan on serving. Allow it to defrost in the refrigerator. Follow the steps above for baking.
Storing and Reheating Tips
Refrigerator: Any leftovers can be store in an airtight container for up to 3-5 days.
Freezer: You can freeze the leftovers in an airtight container for up to two months.
Thawing and Reheating: Defrost in the refrigerator and reheat in the microwave. Reheat in the microwave until warmed through. If you try to reheat this breakfast casserole in the oven or air fryer it will dry it out.

Breakfast Casserole with Tater Tots
Ingredients
- 1 pound ground sausage
- 8 large eggs
- ¾ cup half and half
- 1 teaspoon garlic powder
- ½ teaspoon salt
- 1 teaspoon black pepper
- 1 cup cheddar cheese shredded
- 1 pound frozen tater tots
Instructions
- Preheat the oven to 350°F.
- In a medium skillet, cook ground sausage over medium heat while breaking into small pieces until no longer pink.
- Remove skillet from heat, drain grease from sausage and set aside.
- Grease a 9x13 baking dish with cooking spray. (Glass works best.)
- Spread the crumbled sausage in an even layer over the bottom of the baking dish.
- In a medium bowl, whisk eggs, half and half, garlic powder, salt, and pepper until well combined.
- Pour the egg mixture over the sausage in the baking dish.
- Top with shredded cheese.
- Place frozen tater tots evenly over the top of the sausage, egg, and cheese mixture. Do not submerge tater tots.
- Bake for approximately 50 minutes or until a knife inserted in the middle comes out clean.
- Remove the casserole from the oven and let it sit for 5 minutes before serving.
Notes
