Step 1: Dip the chicken cutlets one at a time in the beaten egg and then into the breadcrumbs. Make sure both sides of the chicken are covered in breadcrumbs. Then place on a baking tray while you get the cast iron skillet ready.
Cooking Instructions
Step 2: Heat oil in a heavy pan and add the chicken cutlets. Cook for approximately 5 minutes per side; they'll continue cooking in the oven so no need to check for complete doneness at this stage.
How to Make the Sandwiches
Step 3: On a parchment-lined baking tray, arrange both sliced rolls with one chicken cutlet on each bottom half. Spread a bit of butter on the top half of each roll.
Step 4: Top each chicken cutlet with 2-3 tablespoons of marinara sauce, followed by mozzarella cheese. Bake in a preheated 425°F oven for approximately 10 minutes, or until the cheese melts and the bread toasts.
Step 5: Let the Chicken Parmigiana sandwiches cool slightly, sprinkle with Parmesan cheese, and serve.

I like to double my recipe for Italian style breaded chicken cutlets. Then I'll flash freeze the baked chicken cutlets for about 30 minutes.
Next, wrap them individually in aluminum foil and place in a freezer-safe plastic bag or container to use at a later time. I can remove two baked chicken cutlets from the freezer and reheat to make this recipe for dinner or another one of my breaded

Chicken Cutlet Parmigiana Sandwich
Ingredients
- 2 boneless skinless chicken cutlets pounded thin
- ⅓ cup Italian seasoned breadcrumbs
- 1 egg
- 2 tablespoons vegetable oil
- ½ cup marinara sauce
- ½ cup mozzarella cheese
- 1 tablespoon freshly grated Parmesan cheese
- 2 Italian style hard rolls
- 2 tablespoons butter
Instructions
- Dip the chicken cutlets one at a time in the beaten egg and then into the breadcrumbs. Make sure both sides of the chicken are covered in breadcrumbs. Then place on a baking tray while you get the cast iron skillet ready.
- Heat the oil in a heavy pan and add the chicken cutlets to the hot oil. Allow them to cook in the oil for about 5 minutes on each side. Don't worry about checking to see if they're cooked all the way through at this point.
- They'll continue cooking in the oven as we bake the sandwiches.
- Place both rolls, sliced in half on a baking tray that's been lined with parchment paper. Then add one chicken cutlet to the bottom half of each roll. Spread the butter on the top half of each roll.
- Spread about 2 to 3 tablespoons of marinara sauce on top of each chicken cutlet followed by the mozzarella cheese.
- Place the tray in a preheated 425° oven for about 10 minutes or until the cheese is melted and the bread is toasted.
- Let the chicken cutlet Parmigiana sandwiches cool slightly and sprinkle with the freshly grated Parmesan cheese before serving.
