Christmas Pancakes
Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 cups milk
- 2 large eggs
- ¼ cup unsalted butter melted
- 1 teaspoon vanilla extract
- ½ cup Christmas-themed sprinkles
Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In a separate bowl, beat the eggs, then add the buttermilk, melted butter and vanilla extract. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Remember not to overmix; a few lumps are okay.
- Preheat a griddle or non-stick skillet over medium heat. If using a skillet, lightly grease it with cooking spray or butter.
- Pour ¼ cup of batter onto the griddle for each pancake. Add the sprinkles evenly over the top.
- Cook until bubbles form on the surface and the edges start to set. This should take approximately 2-3 minutes.
- Carefully flip each pancake with a spatula and cook the other side until golden brown, about 1-2 minutes more.
- Transfer the cooked pancakes to a plate and keep warm while you cook the remaining batter.
