Chunky Peanut Butter Cookies
We are huge peanut butter lovers in our family. Huge. My son ate a peanut butter sandwich every day for lunch while he was in grade school, junior high and high school. And most days when he came home from school he requested another sandwich or two.
That being said, given out love for peanut butter, my family also loves a good peanut butter cookie and these Chunky Peanut Butter Cookies are amazing!

Chunky Peanut Butter Cookie Ingredients
- Unsalted butter, 1 cup
- Chunky Peanut Butter, 1 1/2 cups
- Light Brown Sugar, 1 1/2 cups
- Granulated Sugar, 1/2 cup
- 2 large eggs
- Vanilla extract, 2 teaspoons
- 2 1/2 cups all-purpose flour
- Baking Soda, 1 1/2 teaspoon
- Unsalted Peanuts, 1 cup divided
- Baking Powder, 1 teaspoon
How to Cream the Butter with the Peanut Butter
In the bowl of an electric mixer fitted with a paddle attachment cream the butter, peanut butter, brown sugar, and granulated sugar in a large mixing bowls. Add the eggs and vanilla extract, and mix to combine.
How to Add the Dry Ingredients
In a separate bowl, combine the flour, baking soda, baking powder, and 2/3 cup unsalted peanuts. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
Chill dough for one hour and then proceed to divide the dough into equal-sized balls using a small or large cookie scoop and arrange on the baking trays lined with Parchment Baking Sheets, leaving 2 inches between each ball. Press the dough down with a fork in a crisscross fashion to flatten.
Add remaining chopped peanuts to the top of the cookies and press the peanuts down into them.
How to Bake the Chunky Peanut Butter Cookies
Place the baking sheets into the pre-heated 375 degree oven and bake for 10-12 minutes, or until the cookies are golden brown on top and cooked through.
