Today I'm sharing with you one of my family's favorite go-to dinners with my Easy Italian Dressing Grilled Chicken Recipe. That's right, you don't need a fancy marinade for your chicken, all you need is this easy recipe for Italian dressing and dinner will be delicious!

One of my favorite things to do with the warm weather is to use the outdoor grill for our dinner. Only sometimes I hate having to run in and out of the house watching the food cook on the grill while I have other food cooking inside on the stove top.
The Hamilton Beach Indoor Searing Grill is an easy-to-use appliance that really does allow you to grill indoors! A light indicates when your grill reaches the desired temperature. This compact indoor grill can be used regardless of weather.
If you live in an apartment and don't have access to an outside grill, this is the perfect solution for you. I wish we had this when we were living in Queens all those years ago!
Clean up is so easy with the removable hood and drip tray, both are dishwasher safe. Trust me when I tell you that this is not like other indoor grills. Clean up really is easy!
How to Make Grilled Chicken Indoors
I like to slice my chicken breasts in half and then pound them out until they're thin. And then I marinate the chicken in the Italian dressing overnight in the refrigerator for best results or for at least 6 hours before grilling.
In no time at all the chicken is grilled to perfection! I like to use a meat thermometer to make sure the internal temperature of the chicken reaches 160 degrees.
How to Make Grilled Veggies
Now, let's grill the vegetables! For this meal I grilled zucchini, red onion and red potatoes. You need to boil the potatoes until they're almost fork tender before you can grill them. Otherwise they will never be tender enough to eat.
Place the vegetables on the Hamilton Beach Indoor Searing Grill and brush on the Italian salad dressing.
Cook the vegetables until they are fork tender and looking beautiful.
Allow the indoor searing grill to cool completely before taking it apart and washing. The hood, the grill and the drip tray can be placed in the dishwasher. I used a damp cloth on the heating element. Everything cleaned up beautifully.
I have used the Hamilton Beach Indoor Searing Grill quite a few times now. Besides the grilled chicken recipe I shared with you today, I also made hamburgers! They came out delicious as well. A few days ago I made quesadillas on the grill as well using leftover chicken from the night before. So easy!

Homemade Italian Salad Dressing
Equipment
Ingredients
- 6 tablespoon Olive Oil
- 2 tablespoon apple cider vinegar
- 1 tablespoon dried parsley
- 2 garlic cloves; minced
- 1 teaspoon dried basil
- ½ teaspoon dried red pepper flakes
- ½ teaspoon dried oregano
- salt and pepper to taste
Instructions

Combine all ingredients in small bowl and blend.

Season to taste with salt and pepper.

Serve over fresh salad greens.

Refrigerate in an airtight container.
