- Instead of traditional semi-sweet chocolate chips, substitute mini chocolate chips or even white chocolate chocolate chips!

Step-by-Step Instructions
- Step 1: In a bowl, beat together the brown sugar, granulated sugar, and coconut oil until light and fluffy.
📌Quick Tip: Since we're using coconut oil in place of butter, make sure it's chilled for better results.
- Step 2: Add the dry ingredients to a bowl and stir to combine. Then add the dry ingredients to the sugar ingredients and mix until everything is combined.
- Step 3: Add the vanilla extract and egg. Mix till combined.
- Step 4: Add the oats followed by the chocolate chips.
- Step 5: Using a small cookie scoop, add the cookies to the parchment baking paper then gently lift the parchment paper and add it to the bottom of the air fryer being careful NOT to have extra paper running up the sides of the air fryer. If you do, the excess paper will get "caught" by the air flow and fold over the cookies.

- Air fry or "bake" the cookies for five minutes or until golden brown.
- Once they're done, transfer the Air Fryer Oatmeal Cookies to a cooling rack to cool before enjoying with a tall glass of milk!

- Allow the Air Fryer Oatmeal Cookies to cool completely before storing them in an airtight container. This will prevent moisture buildup and maintain their texture.

Air Fryer Oatmeal Cookies
Ingredients
- ¾ cup coconut oil
- ¾ cup packed brown sugar light
- ½ cup granulated sugar
- 1 and ⅓ cup all-purpose flour
- ¾ teaspoon baking soda
- ½ to 1 teaspoon cinnamon to taste
- ¼ teaspoon salt
- 2 tablespoons vanilla extract
- 1 large egg
- 2 and ¼ cups old-fashioned oats
- 1 cup chocolate chips semi-sweet
Instructions
- Preheat the air fryer to 350°F.
- In a large bowl, beat together the brown sugar, granulated sugar and coconut oil.
- In another bowl, mix together the flour, baking soda, cinnamon and salt.
- Add ⅓ of the flour mixture to the sugar/coconut mixture. Mix together and then repeat until the flour and sugar mixture is completely combined with the sugar mixture.
- Add in the vanilla extract and egg. Combine together and then stir in the oats.
- Finally, fold in the chocolate chips.
- Fit a piece of parchment paper to the inside of the air fryer. Once you have the paper sized correctly, remove the paper to the countertop or cutting board.
- Scoop the dough into balls and add them to the parchment paper. Then gently lift the parchment paper and add it back to the air fryer.
- Air fry the cookies for 5 minutes or until golden brown.
- Remove the cookies and transfer to a baking rack to cool.
- Repeat the steps until all the dough is baked!
- Depending on the size of the cookie scoop you use, you should have about 16-20 cookies.
