Tips for Perfectly Crispy Air Fried Veggies
- Cut evenly: Slice all vegetables into similar-sized pieces to ensure even cooking.
- Don’t overcrowd: Lay the kabobs in a single layer to allow hot air to circulate around each one.
- Toss in oil: A light coating of olive oil helps the veggies crisp up and enhances flavor.
- Shake or turn halfway: Flip the kabobs or shake the basket halfway through cooking for even browning.
- Preheat the air fryer: Starting with a preheated air fryer helps achieve that crisp-tender finish.
- Use bamboo skewers safely: If using wooden skewers, soak them in water for at least 20–30 minutes before air frying to prevent burning. You may also need to trim them to fit your air fryer basket.

Substitutions and Variations
Switch up the veggies: Try using bell peppers in different colors, eggplant, asparagus, or small chunks of sweet potato or butternut squash (par-cook firmer veggies before skewering).
Use different marinades: Change up the flavor by using Italian dressing, balsamic glaze, garlic herb butter, or your favorite seasoning blend.
Go skewer-free: Don’t feel like threading everything? Toss the chopped veggies with marinade and air fry them loose in the basket—same great flavor, less prep.

Step-by-Step Instructions
This section provides step-by-step photos and instructions to guide you through the recipe. For the complete printable version, scroll down to the recipe card below.
Step 1: Chop and slice the vegetables and place in a large mixing bowl. Keep cherry tomatoes whole when air frying—slicing them can cause them to burst open and release too much moisture, which may affect the texture of the other vegetables.
Step 2: Toss the vegetables in the olive oil, salt, paprika, and garlic powder. Allow to marinate for 15 minutes.
Step 3: Thread the vegetables onto bamboo skewers that have been soaked in water for 20 minutes. Arrange in a single layer in the air fryer basket.
Air Frying Instructions
Step 4: Preheat the air fryer for about 5 minutes at 380°F. Then air fry for 6-8 minutes, flip the skewers and cook for another 3-5 minutes until slightly crispy.
How to Know When Your Vegetable Kabobs Are Done?
When air frying vegetable kabobs, look for lightly charred edges and tender centers—they should be easy to pierce with a fork but still hold their shape. Flip the skewers about halfway through the 10–12 minute cook time to ensure even browning on all sides.

Insider Tips from My Kitchen to Yours
Want to make this recipe even better? Don’t miss my favorite tips below for boosting flavor, perfecting texture, and saving time in the kitchen!
✔️ DO cut your vegetables into similar-sized pieces to ensure even cooking and a consistent texture on every skewer.
❌ DO NOT overcrowd the air fryer basket—this prevents the hot air from circulating properly and can leave your veggies soggy instead of crisp-tender.

I don’t recommend using frozen vegetables for this recipe because they tend to release excess moisture as they cook, which can prevent the kabobs from getting that nice crisp texture. Fresh vegetables hold their shape better and give you the best flavor and results in the air fryer
Preheating the air fryer isn’t always required, but I do recommend it for this recipe. Starting with a hot air fryer helps the vegetables cook more evenly and develop a crisp, slightly charred exterior.
Bamboo skewers work well in the air fryer, but be sure to soak them in water for 20–30 minutes beforehand to prevent burning. You can also use metal skewers if they fit in your air fryer basket—just handle with care, as they get very hot.
How to Store, Freeze and Reheat
Refrigerate: Store leftover kabobs in an airtight container in the refrigerator for up to 3 days. Let them cool completely before storing to avoid condensation and sogginess.
Freezer: While freezing is possible, the veggies may lose some texture when reheated. Instead of freezing, try chopping up the leftovers and tossing them into cooked pasta for an easy second meal.
Reheating Tips: Place the kabobs in the air fryer at 350°F for 3–5 minutes, or until heated through and slightly crisped again. You can also reheat in the oven or microwave, but the air fryer gives the best texture.
