Kid-Friendly Fish Tacos

I prepared the toppings I know my family loves for tacos. We had sliced tomatoes, shredded lettuce, sliced black olives, salsa and a fun crunchy onion topping that was new to us. 

I couldn't believe how easy it was to cook the Alaska pollock. For this recipe, I chose to bake the frozen fish and season it with my Homemade Chimichurri Sauce. I knew the sauce would be the perfect accompaniment for the white fish and tacos.

Main Ingredients Needed

• taco shells or taco boats
• Alaska pollock fillets
• Chimichurri Sauce
• sliced black olives
• shredded lettuce
• diced tomatoes
• salsa

Step-by-Step Instructions

Step 1: Prepare the Chimichurri Sauce according to the directions.

Step 2: Spread a little of the sauce on top of the frozen fish and bake for 18 minutes.

Step 3: While the fish is baking, prepare your favorite taco toppings such as lettuce, tomatoes, and black olives.

Step 4: Add your lettuce, fish, and remaining toppings to the taco shells.

Step 5: Finally, drizzle a little more Chimichurri Sauce if desired.

Storing, Freezing and Reheating Tips

Refrigerating Tips: If you have any leftovers, it's best to store the leftover fish and toppings separately in the refrigerator. Store the taco shells in an airtight container at room temperature.

Freezing Tips: You can freeze any leftover cooked fish for up to 2 months. Store in a freezer safe bag with as much air removed as possible.

Reheating Tips: Defrost then reheat for a minute or two in the microwave or at 375° in the air fryer or oven for about 3-5 minutes.

• ½ cup chimichurri sauce
• sliced black olives

Method

 

1. Preheat the oven to 425°F.
2. Place the Alaska pollock fillets in a baking dish that's been sprayed with non-stick cooking spray.
3. Spoon a little of the chimichurri sauce on top of each fillet.
4. Bake for 15 to 18 minutes.
5. While the fish is cooking, get the topping ingredients ready for the taco bar.
6. To assemble the tacos, place the shredded lettuce on the bottom of the taco shell or boat followed by the sliced fish. Top with diced tomatoes, black olives, and salsa. Drizzle with more of the chimichurri sauce if desired.
