This was my day yesterday. I knew I had to be out of the house for most of the day and wasn't really sure what to fix for dinner. Going through a drive-thru for dinner or ordering something to pick up wasn't something I wanted to do as I really wanted to stick to my healthy way of eating.

Crock Pot Salsa Chicken
This recipe for Crock Pot Salsa Chicken is a recipe you can put together in the morning before leaving the house and in a few hours, you have perfectly cooked seasoned chicken to serve as tacos or serve over rice for dinner.
It's really nice to come home to a meal where all you have to do is shred the chicken and lay out the toppings for chicken tacos.

Main Ingredients Needed

- 2 - 4 boneless skinless chicken breasts
- Your favorite brand of salsa and heat level
- 1 (1.25 oz) packet taco seasoning or you can use 3 tablespoons of my Homemade Taco Seasoning
Step-by-Step Instructions
- Step 1: Spray the inside of the crock pot with non-stick cooking spray.
- Step 2: Place the chicken breasts in the crock pot. Sprinkle the chicken breasts with the taco seasoning.
- Step 3: Then pour the entire bottle of salsa on top.
- Step 4: Cook on high 4 to 6 hours or low 6 to 8 hours.
Tips for Preparing Crock Pot Salsa Chicken
- Make sure you spray the inside of your crock pot first.
- Crock pot liners work great to keep the crock pot clean, but I find spraying the inside of the crock pot works fine for me.
- Seasoned the chicken breasts with a little bit of salt and pepper.
- You do NOT need to add any water. I've seen some recipes that call for adding water, but I do not think it's necessary. Actually, I think adding water will make the salsa thin and not give you a chunky style sauce when everything is done cooking.
- You can even use frozen chicken breasts...which is what I did! You may have to add an hour or so to the cooking time, but the recipe came out great.
- After the chicken has cooked, use two forks or these fun shredder claws to help shred or pull the chicken apart.
- Serve with flour tortillas, lettuce, sour cream and cheddar cheese to make delicious chicken tacos. You can also use taco shells, but my family really enjoys using flour tortillas.
- Store any leftovers in an air-tight container in the refrigerator for three to four days.
- This recipe reheats really well and is great to bring to work with you for lunch.
Serving Tips
- Serve over fresh cooked rice or quinoa.
- You could add black beans and corn to the top to create a burrito bowl.
- My favorite way is to serve it over a bowl full of crunchy lettuce leaves.
- Add a few crushed tortilla chips to the top for added crunch.

Will definitely give this a try! Thanks!! I mostly eat low carb, keto-ish so this is great! I'll cook the chicken and mild salsa since my young children think everything is spicy!! For myself I'll serve on a bed of crunchy lettuce with some guacamole and salsa. Yum!!! Maybe sour cream with cilantro. For the kids I'll put it in a tortilla wrap and hubby too. Thanks! Easy, peasy! I make Tex-Mex chicken soup which is similar to the recipe. 1 jar salsa, chicken breasts, 1 block cubed pepper jack, and chicken broth. I also add whatever I have on hand. Have used extra bell pepper that was on the fridge. Zucchini. Used up jarred fire roasted peppers. Have tried many different varieties and it is AMAZING. I've done it without adding extra veggies and still delicious and very versatile. I bet this will be just as yummy, a non soup version.

I've never had any problems keeping chicken that long in the refrigerator, but I just checked with Food Safety Gov and they recommend 3 to 4 days. I will adjust my post. Thank you for visiting!

I've never had issues. I make a very similar recipe to hers, but it's a soup version, basically of this recipe. Pretty much only I eat it, so it lasts me almost a week and still delicious. The saltiness of the salsa will help preserve it a bit longer.
