These cookies are made with dehydrated marshmallows just like my Hot Chocolate Marshmallow Cookies. The marshmallows hold up really well to the heat of an oven because they're dehydrated and not fresh.
If you bake with fresh marshmallows, the end result is usually a much gooier type of cookie recipe, like a s'mores recipe or cookie. Using the dehydrated marshmallows gives you the same taste, but a much better texture when baking.
These are the same type of marshmallows you find in the kid-favorite cereal, Lucky Charms. I mean, how many of you didn't pick all the marshmallows out of the box when you were younger? Or maybe it was just me.

- Depending on the size cookie scoop you use, this recipe should yield approximately 30 cookies.
- The mini marshmallows use in this recipe are not traditional mini marshmallows. They are dehydrated and come in a bottle like sprinkles.
- They can be difficult to find in the grocery store. Look in the hot chocolate or coffee/tea aisle of your local grocery store.
- I purchased mine from Amazon. There's always a great selection on Amazon for everything, right?

How long do Dehydrated Marshmallows Last?
Once the packaging is unsealed, dehydrated marshmallows can maintain their taste for approximately one year. However, the texture might undergo a noticeable change and become softer after a period of two to three months.
Here are two other options you can use in this recipe. Do not use traditional mini marshmallows as they will puff up too much for the recipe. And don’t worry about thinking you won’t use all these dehydrated marshmallows up! They’re perfect for hot cocoa all winter long!

- Add ½ cup of chocolate chips or white chocolate chips!
- If you can’t find Mallow Bits, you can purchase dehydrated marshmallows on Amazon…the kind they use in hot cocoa mixes.
Step-by-Step Directions
Step 1: Combine all the dry ingredients in a bowl using a whisk to make sure they're mixed together.
Step 2: Set aside while you prepare the wet ingredients.
Step 3: Beat together the butter and sugars until combined and fluffy.
Step 4: Add the vanilla extract and beat again.
Step 5: Add the egg and beat again.
Step 6: Slowly add the flour/cocoa powder mixture.
Step 7: Add the red and green M&M's.
Step 8: Now add in the dehydrated marshmallows.
Quick Tip
Reserve about ¼ cup of the M&M's to add to the tops of the dough balls.
Chill the Dough
Step 9: Allow the dough to chill in the refrigerator for at least 30 minutes. Chilling the dough is a crucial step in cookie baking.
When the dough is chilled, the fat in the batter solidifies, leading to reduced spreading during baking. This results in cookies with a thicker and chewier texture, making them even more delightful to bite into.
If a recipe calls for chilling the dough, you really need to chill the dough.
Baking Instructions
Step 10: Using a small cookie scoop, place the dough onto a parchment lined baking sheet. Press the remaining M&M candy pieces onto the tops of the dough balls.
Step 11: Bake in a preheated 350°F oven for 9 to 11 minutes.

The bottle I purchased is good for 6 months. The homemade version are good for a few months when stored in an air-tight container.
Storage Instructions
Pantry: Allow the cookies to cool completely before storing in an airtight container. Store at room temperature for up to 2 weeks.
Freezer: Flash freeze the cookies on a baking sheet for about an hour until firm. Transfer the cookies to a plastic container or freezer safe bag and freeze for up to 3 months.

Marshmallow Christmas Cookies
Equipment
Ingredients
- ½ cup butter; softened
- ⅓ cup granulated sugar
- ⅔ cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 ¼ cup all purpose flour
- ⅓ cup unsweetened cocoa powder
- ½ teaspoon baking soda
- ⅛ teaspoon salt
- 1 cup M&M candy pieces
- 1 cup Marshmallow Bits or dehydrated marshmallows - see note
Instructions
- In the bowl of your KitchenAid or stand mixer, fitted with the paddle attachment, beat together the butter and sugars until combined and fluffy.
- Add the egg and the vanilla and beat again.
- Combine all the dry ingredients in a bowl using a whisk to make sure they’re mixed together. Add the dry ingredients to the butter and sugar mixture. Work in batches, a little at a time so you’re sure to get everything combined.
- Add all but ¼ cup of M&M candy pieces then add the marshmallow bits or dehydrated marshmallows.
- Allow the dough to chill in the refrigerator for at least 30 minutes.
- Using a small cookie scoop, place the dough onto a parchment lined baking sheet. Then randomly press the remaining M&M candy pieces into the tops of the cookie dough balls.
- Bake in a preheated 350°F oven for 9 to 11 minutes.
