One of the nice things about planting a summer garden is enjoying very fresh vegetables. We love these Parmesan Crusted Zucchini Sticks that I made tonight for dinner.
I love to plant zucchini in our garden every summer. And yes, sometimes we grow an abundance but that’s okay because we enjoy Cheesy Zucchini Casserole or Zucchini Pizza Bites as side dishes with grilled barbecue chicken.
These zucchini sticks are delicious and crunchy without being fried. I made these in a traditional oven, however I am also including instructions for baking in them in an air fryer towards the bottom of this post.

INGREDIENTS:

- Zucchini
- Panko breadcrumbs – you can use regularly breadcrumbs if that’s all you have, but I really think using Panko breadcrumbs is the secret to the crispiness of this recipe.
- Parmesan cheese; grated
- Garlic powder
- Fresh parsley; chopped
- Fresh basil; chopped
- Milk
- Egg
- Olive oil spray
Instructions
Preheat oven to 425 degrees F.
Combine together the breadcrumbs, Parmesan cheese and spices. Set aside.Cut each zucchini lengthwise in half and then cut each half into sticks.
Beat egg and milk in a shallow dish.Dip each zucchini stick into the egg mixture and then into the breadcrumb mixture.

Place each zucchini stick on to a baking tray that has been lined with parchment paper. You may need to press the breadcrumb mixture into the zucchini to make sure it is sticking.
Spray each zucchini stick with the olive oil cooking spray before baking. Bake for 10 to 15 minutes until the zucchini sticks are golden brown and tender.

Air Fryer Instructions
This recipe can easily be prepared in an air fyer. Follow these simple steps for an even healthier version of this delicious recipe:
- Preheat the air fryer to 400 degrees F.
- Place the zucchini sticks in a single layer and bake 12 to 14 minutes, flipping them halfway until the zucchini sticks are crispy and tender.
- Depending on the size of your air fryer, you might have to do this in batches.
