Perfect Marinade for Grilled Chicken
I do believe I have found the perfect marinade for grilled chicken. It's become a favorite marinade I have been using for awhile now that is just delicious.
It uses one of my favorite herbs, cilantro. Now I know some people have a problem with cilantro and if you do, please substitute parsley.
It's easy to put together and you can double up on the ingredients to keep the extra in a mason jar in the refrigerator. Sometimes in the summer when it's really hot out we'll have grilled chicken a few times a week.
Grilled chicken is an easy meal to make during the hot summer months. You're going to love this perfect marinade that's a little tangy and sweet and oh so delicious for chicken!
- 1 6 ounce can pineapple juice
- 2 Tbs. chopped cilantro
- ¼ cup chopped red onion
- ⅓ cup teriyaki sauce
- 2 Tbs. olive oil
- 2 Tbs. brown sugar
- 1 Tbs. chopped garlic
- salt and pepper to taste
Using a food processor, combine all the ingredients together.
Place the chicken in a plastic bag or casserole dish and pour half of the marinade over your chicken.
Place the chicken in the refrigerator to marinade for a few hours or overnight.
Place the remaining marinade in a storage container or mason jar.
Place the chicken on your hot grill and cook until the juices run clear. Remove the chicken from the grill and place on a clean platter. Cover the chicken with aluminum foil and let rest for at least ten minutes before slicing.
While the chicken is resting, take the reserved marinade and place in a small saucepan. Bring to a boil on top of your stove.
Once the marinade has reduced and thickened nicely, remove from heat and set aside.
Slice the chicken and drizzle the thickened marinade on top.
