Perfect Marinade for Grilled Chicken

Grilled chicken is an easy meal to make during the hot summer months.  You’re going to love this perfect marinade that’s a little tangy and sweet and oh so delicious for chicken!

Perfect Marinade for Grilled Chicken

I do believe I have found the perfect marinade for grilled chicken.  It’s become a favorite marinade I have been using for awhile now that is just delicious.

It uses one of my favorite herbs, cilantro.Now I know some people have a problem with cilantro and if you do, please substitute parsley.

It’s easy to put together and you can double up on the ingredients to keep the extra in a mason jar in the refrigerator.  Sometimes in the summer when it’s really hot out we’ll have grilled chicken a few times a week.

Grilled chicken is perfect for dinner with a big tossed salad.  You can use the leftovers for lunch the next day or make chicken quesadillas for dinner another night of the week.

Grilled chicken is an easy meal to make during the hot summer months.  You're going to love this perfect marinade that's a little tangy and sweet and oh so delicious for chicken! 

Ingredients
  • 1 6 ounce can pineapple juice
  • 2 Tbs. chopped cilantro
  • 1/4 cup chopped red onion
  • 1/3 cup teriyaki sauce
  • 2 Tbs. olive oil
  • 2 Tbs. brown sugar
  • 1 Tbs. chopped garlic
  • salt and pepper to taste
Instructions
  1. Using a food processor, combine all the ingredients together.
  2. Place the chicken in a plastic bag or casserole dish and pour half of the marinade over your chicken.
  3. Place the chicken in the refrigerator to marinade for a few hours or overnight.
  4. Place the remaining marinade in a storage container or mason jar.
  5. Place the chicken on your hot grill and cook until the juices run clear. Remove the chicken from the grill and place on a clean platter. Cover the chicken with aluminum foil and let rest for at least ten minutes before slicing.
  6. While the chicken is resting, take the reserved marinade and place in a small saucepan. Bring to a boil on top of your stove.
  7. Once the marinade has reduced and thickened nicely, remove from heat and set aside.
  8. Slice the chicken and drizzle the thickened marinade on top.
