Strawberry Shortcake Kabobs
Store-bought pound cake works best, however you can still use your favorite homemade recipe. If using homemade, ensure it's completely cooled before assembling the kabobs. Day old pound cake is best!
If you don't want to use the powdered sugar glaze, you can use store-bought vanilla or cream cheese icing and tint it with food coloring.
Select strawberries that are ripe but still firm enough to hold their shape on the skewers. Avoid overly ripe or soft strawberries, as they may become mushy and fall apart.

Step-by-Step Instructions
Step 1: Rinse the fresh strawberries under cold water and gently pat them dry. Remove the green hulls (stems) and slice each strawberry into generous chunks.
Step 2: Begin by threading a piece of pound cake onto a wooden skewer. Follow this with a strawberry chunk, then another piece of pound cake, and so on. Alternate between pound cake and strawberries until you have three of each on the skewer.
Top Tip
To prevent the cake from falling apart on the skewers cut the pound cake into slightly larger cubes to make them sturdier.
For the best results, avoid using freshly baked pound cake as the cubes may be too delicate and prone to falling off the skewers; instead, opt for pound cake that has cooled and firmed up. This is why I recommend using store-bought cake.
Step 3: In a small bowl, combine the powdered sugar and heavy cream. Whisk together until smooth. Add a few drops of blue food coloring and continue whisking until the icing reaches your desired shade of blue.
Step 4: Transfer the blue icing to a piping bag or a ziplock bag with a corner snipped off. Gently drizzle the icing over the assembled skewers in a zig-zag pattern. For a more vibrant presentation, you can also use additional red and white icing to create a patriotic theme.

- 11.5 ounce pound cake cut into cubes
- 1 pint strawberries
- 2 cups powdered sugar
- 6 tablespoons heavy cream
- blue food coloring
Instructions
- Cut the strawberries into chunks.
- Add the cubed pound cake and strawberries to a bamboo skewer, alternating between each ingredient until three of each have been added.
- In a bowl, whisk together the powdered sugar with the heavy cream and blue food coloring until smooth.
- Transfer to a piping bag and drizzle the icing over the top of the fruit kabobs before serving.
