Difference between Pumpkin Puree and Pumpkin Pie Mix
This recipe uses canned pumpkin puree which is not to be confused with canned pumpkin pie filling. If you wanted, you could make your own homemade pumpkin puree.
However, did you know that there is a difference between pumpkin puree and pumpkin pie mix? Most people don't realize it, but these two ingredients are actually not the same.
Pumpkin puree is made from fresh pumpkins that have been cooked and then pureed. It has a very thick consistency and is very smooth. Pumpkin pie mix, on the other hand, is made from canned pumpkins that have been mixed with various spices.
So, what does this mean for your baking? If you're looking for a traditional pumpkin taste, you'll want to use pumpkin pie mix. But if you're looking to experiment with new recipes or create something unique, pumpkin puree is the way to go.

Step-by-Step Instructions
Step 1: In a medium bowl add flour, baking powder, cinnamon, all spice, baking soda, ginger and salt. Whisk or stir it together, set aside.
Step 2: In a large bowl mix together the pumpkin and melted butter until smooth. Gradually add the milk stirring consistently to keep the mixture smooth. Last, add in both eggs and mix well.
Step 3: Add the dry ingredients and carefully mix until it is just combined. Be careful not to over mix.
Cooking the Pancakes
Step 4: Heat griddle or pan on stove. Lightly coat the pan with about 1-2 teaspoons of canola oil. Scoop ¼ cup batter onto the heated pan. Once the edges begin to look golden, the top should look puffy (about 2 minutes). Flip and cook until bottom is brown and crisp! Serve immediately.

Step 5: Heat maple syrup on stove top and whisk in the cinnamon. Or you can prepare this easy brown sugar cinnamon butter recipe by combining 3 tablespoons room temperature butter, 1 tablespoon brown sugar and 1 teaspoon ground cinnamon together. Spread on top of the pumpkin pancakes...yum!

- ¼ teaspoon baking soda
- ¼ teaspoon ground ginger
