Step 1: Using a mixer, beat butter and sugar in a large bowl until light and fluffy. Mix in egg and vanilla.
Step 2: In a medium bowl, stir together pancake mix, oatmeal, cinnamon and nutmeg. Add in dry ingredients to the butter sugar mixture and mix until fully combined.
Step 3: Fold in the raisins. Line a cookie sheet with a silicone baking mat or parchment paper. Drop batter by tablespoons.
Step 4: Using the bottom of the glass, dip in a plate with 2 tablespoons of swerve brown sugar and flatten each cookie slightly. Re-dip into sugar after flattening each cookie.

Simple Oatmeal Cookies For Diabetics

- 1 and 1 /2 cups Bisquick Pancake and Baking Mix
- ½ cup old fashioned oats
- 1 ½ teaspoons cinnamon
- ¼ teaspoon nutmeg
- ½ cup butter softened
- 1 cup + 2 Tablespoons Swerve Brown Sugar separated
- 1 teaspoon vanilla
- 1 egg
- 1 cup raisins
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a medium bowl, stir together pancake mix, oatmeal, cinnamon and nutmeg. Set aside.
- Using a mixer, beat butter and sugar in a large bowl until light and fluffy.

- Add in bisquick mixture and mix until fully combined.
- Fold in the raisins
- Line a cookie sheet with a silicone baking mat or parchment paper. Drop batter by tablespoons.

I didn't have the Swerve sugar on hand so I used half brown sugar and half Turbinato sugar. I also doubled the oats, and 3/4 cup butter so it would stick together better with the extra oats. So, they turned out tasting great, but not sugar free this time. also had to bake 15 minutes. I did like using the baking mix, much simpler.
