Chicken Cutlet Pesto Sandwich
When preparing this sandwich, use boneless, skinless chicken breasts that are roughly the same size which will help them cook evenly.
Season the chicken before grilling. If you don't want to use the pesto sauce, marinate the chicken in Homemade Italian Salad Dressing!
You can use either homemade pesto sauce your favorite store-bought version.
Choose a bread that can hold up to the ingredients without getting soggy or falling apart. For this recipe, I used Ciabatta Rolls but you could also use sourdough or even your favorite focaccia bread.
Layer the cheese on top of the chicken while it's still hot so it can melt perfectly.
Can I make chicken cutlet sandwiches ahead of time?
This sandwich is best eaten right after making. To prep ahead and make assembling faster at dinner time, you can cook the chicken and store it in the fridge in an airtight container up to 2 days prior. Reheat the chicken then assemble the sandwich as instructed.

Chicken sandwiches are often considered healthier than burgers because chicken is a leaner source of protein than beef.
How to Freeze Cooked Chicken Cutlets
To freeze cooked chicken cutlets, first allow them to cool completely at room temperature. Then arrange them in a single layer on a baking sheet that's been lined with parchment paper.
Place the tray in the freezer to "flash freeze" for about 30 minutes. Once frozen, place them in either airtight containers or freezer-safe bags, label with the date and contents, and store in the freezer for up to 4 months.
When ready to use, thaw in the refrigerator overnight or reheat directly from frozen in the oven or on the stovetop.

Step 1: Cut each chicken breast in half horizontally to create 6 thin cutlets. Season the cutlets with salt, pepper, and Italian seasoning.
Step 2: Heat a tablespoon of oil in a skillet over medium-high heat. Cook the chicken until it reaches an internal temperature of 165°F.
Top Tip
Use a digital meat thermometer to ensure the internal temperature of the chicken reaches 165°F.
How to Assemble the Sandwiches
Step 3: Spread mayonnaise on one side of the ciabatta rolls. Lay the chicken on top. Then spread pesto sauce on the other side.
Step 4: Place cheese and tomato on top of the chicken.
How to Grill the Sandwiches
Step 5: Brush the tops of the rolls with oil before assembling the sandwiches.
Step 6: Utilize either a grill pan or the skillet previously used to cook the chicken to grill the sandwiches until the cheese has melted.

Storing, Freezing, Thawing and Reheating Tips
Refrigerator: These sandwiches are best assembled and eaten right away. If you have leftovers though, you'll want to remove the lettuce and tomatoes before reheating the sandwich in the oven.
Thawing and Reheating: Defrost the chicken overnight in the refrigerator. Bake the chicken for 5-10 minutes at 350°F or until heated through, then reassemble the sandwich.
Freezing: You can freeze the ingredients separately, then thaw and assemble your sandwiches as usual for best results. The cooked chicken will freeze for up to 2-3 months if it's well wrapped and in an airtight container or freezer bag.

Chicken Cutlet Sandwich
Ingredients
- 3 boneless skinless chicken breasts
- 1 tablespoon Italian seasoning
- ¼ cup vegetable oil
- 4 tablespoons mayonnaise
- ½ cup prepared pesto sauce
- 4 ciabatta rolls
- 8 slices white cheddar cheese
- lettuce tomato slices
- salt and pepper
Instructions
- Slice each chicken breast in half lengthwise to create 6 thin chicken cutlets.
- Season both sides of the chicken cutlets with salt, pepper, and Italian seasoning.
- In a large skillet, heat 1 tablespoon of vegetbale oil over medium-high heat. Cook the chicken on both sides for about 5 minutes or until the chicken reaches an internal temperature of 165°F.
- Remove the chicken from the pan.
- Assemble the sandwiches by slicing the ciabatta rolls in half. Spread about 1 tablespoon of mayonnaise on one halves of the rolls. Spread about 1 ¼ tablespoons of pesto sauce on the other halves of the rolls.
- Divide the chicken up and place on top of the mayonnaise side of the rolls. Add a slice of cheese on top of the chicken, followed by sliced tomatoes and lettuce.
- Place the pesto side of the rolls on top of the chicken side. Lightly brush the tops of roll with the remaining vegetable oil.
- Using a grill pan or the same skillet you cooked the chicken in, cook each sandwich for 2 minutes on each side or until the cheese has melted.
- Serve the sandwiches immediately.
