The start of the new week is always exciting. And what better way to start the week than with planning out what you’re going to be making for dinner every night for your family. With the help of our Weekly Menu Plans that I share every week, I hope to ease the burden of trying to figure out what’s for dinner every night of the week…well at least for FIVE nights this week.
In the first place, we’re all busy. Especially if you still have children at home who are involved in after-school activities. Even on your best day, getting dinner on the table can be a struggle. Some days I only have a limited amount of time to get dinner prepared.
This week I am featuring Healthy Crock Pot Meals that will help you get dinner on the table pretty quick. All you’ll need is a little planning and you can prepare a delicious meal for your family every night this week!
Healthy Crock Pot Meals
To begin with, I think you’re going to really enjoy this easy recipe for making shredded chicken using the crock pot. This is my favorite way to cook chicken. Not only does it taste delicious, but you can use it in other recipes that call for shredded chicken.
Spaghetti Meat Sauce is another easy recipe you can make healthy by swapping out the ground beef for ground turkey!
Next up we have Chicken Zucchini Meatballs. In this case, to make this recipe healthy, swap out the pasta for zucchini noodles! If you’re stressed for time one night this week, you’ll enjoy the Healthy Baked Ziti to keep in theme with our healthy crock pot meals. This recipe uses whole wheat pasta!
Lastly, we are featuring Barbacoa Beef Tacos which is perfect for Taco Tuesday this week!

This is one of the easiest and healthiest ways to cook chicken that you can used in other recipes that call for shredded chicken. Use ground turkey in place of ground beef to make this recipe healthy. Then cook it slow and low! Only 8 ingredients, and with hidden veggies in them, these chicken zucchini meatballs are made in the crockpot and are paleo, gluten, dairy free! This Slow Cooker Baked Ziti is made with ground turkey and whole wheat pasta. The pasta cooks right in the slow cooker so it soaks up the delicious flavor of the sauce!
