Peanut Butter Chocolate Chip Cake

Peanut Butter Chocolate Chip Cake – starts out with a cake mix but you add delicious creamy peanut butter and chocolate chips to the batter.  Then make this easy homemade chocolate glaze icing to top it all off with…it’s amazing!  Let me show you how another cake mix hack recipe that uses a cake mix as an ingredient.

Peanut Butter Chocolate Chip Cake

This week’s Something Yummy for My Colonel’s Tummy is this delicious Peanut Butter Chocolate Chip Cake.   I made this cake for my daughter when she came home from college a few weeks ago and it was a hit!

You can really taste the peanut butter in this cake. The best thing about this recipe is it starts off with a cake mix and then I topped it with a very easy homemade chocolate glaze icing.  Your family is going to love it as much as mine did.

How to Make a Peanut Butter Chocolate Chip Cake

Ingredients for the Cake: 

  • 1 pkg. yellow or white cake mix with pudding
  • 1 cup milk
  • 1/2 cup creamy peanut butter
  • 1 teaspoon. vanilla extract
  • 3 eggs
  • 2 cups chocolate chips

Ingredients for the Homemade Chocolate Icing:

  • 3 cups sifted powdered sugar, divided
  • 2/3 cup baking cocoa
  • 1/2 cup (1 stick) butter or margarine, softened
  • 5 to 6 tablespoons milk, divided
  • 1 teaspoon vanilla extract

Instructions for the Cake:

  1. In a large bowl, using an electric mixer, combine the cake mix, eggs, peanut butter and milk until smooth.
  2. Then add the chocolate chips.
  3. Pour the batter into a cake pan that has been sprayed with non-stick cooking spray.
  4. Bake at 350 degrees for 40 to 45 minutes or until a knife inserted in the middle comes out clean.
  5. Cool in pan for 10 minutes before inverting to cool completely on a wire rack.
  6. Once cake has cooled completely, drizzle the homemade chocolate icing on top.

Instructions for the Chocolate Icing:

  1. Beat 1 cup powdered sugar, cocoa, butter, 2 tablespoons milk and vanilla extract in small mixer bowl until creamy.
  2. Gradually beat in remaining sugar and milk until smooth.
  3. Makes 2 cups total.
  4. Using a spoon, start drizzling the icing over the cake.

You can use your favorite cake pan. I like the look of a cake baked in a bundt cake pan. 

 

Let cool  before pouring the icing on top.

How to Make the Homemade Chocolate Glaze Icing

One of the secrets to using a cake mix for your baking is to top the cake with a homemade icing or glaze.  This chocolate glaze recipe comes together really quick and tastes amazing.

Tips for Icing a Cake:

  • Allow the cake to cool completely before even attempting to pour the glaze on top.  If you don’t, the glaze will not properly cling because the cake is too warm.
  • Place the cooled cake on top of the serving platter.  Gently lift the edges of the cake and place pieces of parchment paper underneath.
  • Then pour the glaze on top of the cake and allow the excess to collect on the parchment paper.
  • Remove parchment paper before serving.
