Andes Mint Cookies with Brownie Mix
For this recipe I used mint baking chips. They used to be pretty hard to find year round, but I found my package at Walmart. But you can also purchase them from Amazon.
Not only do these cookies have my favorite mint candies, but there's also semi-sweet chocolate chips. Double the chips, double the deliciousness!

Ingredients

- 1 box brownie mix
- Melted butter
- Eggs
- Chocolate chips - I used semi-sweet but you can use milk chocolate if you prefer.
- Mint baking chips (I used Andes Crème de Menthe baking chips

Baking Tip: If you can't find mint candy chips, purchase the regular mint candies and chop them into little pieces!
Directions
Step 1: Prepare the Brownie Mix Batter
Preheat oven to 325 degrees. Prepare a baking sheet by lining with parchment paper.
Combine brownie mix, melted butter, and eggs in a large mixing bowl.

Step 2: Add the Stir Ins
Add the chocolate chips and mint baking chips. Stir to combine.

Step 3: Baking Instructions
Use a tablespoon to scoop dough onto prepared baking sheet. Bake for 12 to 14 minutes, or until cookies are firm on the edges and soft in the center.
Allow cookies to cool for at least 5 minutes on the baking sheet, then remove to wire cooling rack to cool completely.


The cookies will continue to cook while they cool on the baking sheet after you remove them from the oven. So remove them when the edges are soft but the centers are not completely set.
