To make homemade biscuits without baking powder, you can try the following methods:

  • Use self-rising flour: Self-rising flour already contains baking powder, so you don't need to add any extra. Simply mix the self-rising flour with other ingredients and bake as directed.
  • Substitute with buttermilk: Buttermilk has natural acidity that can activate baking soda as a leavening agent. Replace the baking powder with ¼ teaspoon of baking soda and ½ cup of buttermilk for every teaspoon of baking powder.
  • Use yogurt or sour cream: Yogurt or sour cream can provide acidity and help the biscuits rise. Replace baking powder with ¼ teaspoon of baking soda and ½ cup of yogurt or sour cream for every teaspoon of baking powder.
  • Cream of tartar and baking soda: Cream of tartar is an acid that can activate baking soda. Replace baking powder with ¼ teaspoon of baking soda and ½ teaspoon of cream of tartar for every teaspoon of baking powder.

How to Store Homemade Biscuits

How to Freeze Unbaked Biscuits

  • Place the cut out biscuits on a baking tray that's been lined with parchment paper.
  • Place the tray in the freezer for about 20 to 30 minutes.  
  • Once the biscuits are frozen, place them in a freezer safe bag until needed.

Why are my biscuits dense and not fluffy?

Be sure you're using cold butter since warmer butter can lead to over-mixing and gluten development, resulting in denser biscuits. You'll want to also make sure your leavening agents are fresh since old or expired baking powder can lead to dense biscuits without much rise.

Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 6 tablespoons chilled unsalted butter cut into small pieces
  • ¾ cup milk

Method
 

  1. Preheat the oven to 450°F.
  2. Line a baking sheet with parchment paper and set aside.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. Add the cold butter and using your heart cookie cutter or dough blender, combine the butter and flour mixture until it resembles coarse meal.
  5. Slowly add the milk, stirring with a fork.
  6. Turn the dough out onto a lightly floured surface and knead a few times to bring the everything together.
  7. Roll out the dough about ¾ inch thick.
  8. Using a heart cookie cutter, cut out about 12 biscuits.
  9. If you have scraps, re-roll them and cut out more biscuits. 
  10. Place the biscuits on the prepared baking sheet.
  11. Bake for 13 to 15 minutes or until golden brown.
  12. Cool slightly and serve warm with butter and jam.

I have a recipe from Fanny Farmer that I use to make heart shaped biscuits and it's pretty close to yours. 🙂 When my kids were small, I began baking biscuits for breakfast and we'd have little sausages with them. Perfect for freezing! I need to ask my son if he ever makes them for our grandson.
