Their mild flavor pairs well with bacon and cheese. But you could also use Yukon Gold Potatoes or Red Potatoes.
Tips for Roasting Potatoes
- Start with the right potatoes: Choose floury or starchy potatoes like Russet or Yukon Gold, as they tend to have a fluffy texture when roasted.
- To ensure even cooking, cut the potatoes into similar-sized slices.
- You could cut the potatoes into wedges or thick chunks, but you'll find that the cheese and bacon won't have a place to "sit" like they do on top of thick-sliced potatoes.
- Give the potatoes enough room on the baking sheet to allow for proper air circulation. Overcrowding can lead to steaming rather than roasting.

- You can use any type of potato you'd like. I used russet potatoes. This recipe would work great with red potatoes or even sweet potatoes.
- Try your favorite shredded cheese! Or a combination of flavors.
- You can use a packet of ranch dressing seasoning or use my homemade ranch dressing mix.
Step-by-Step Instructions
Step 1: Wash and dry the potatoes. Then slice them into ½ inch thickness. Place them on a baking tray that's been lined with aluminum foil or parchment paper.
Step 2: Brush each potato with the olive oil, then sprinkle with the ranch seasoning mix and black pepper.
Quick Tip
To ensure even cooking, cut the potatoes into similar-sized slices.
Step 3: Place the baking tray in the oven and cook for 20 minutes.
Step 4: Then remove the tray from the oven and flip the potatoes over. Return the tray to the oven and cook for an additional 15 minutes.
Step 5: Remove the tray from the oven, turn the oven up to 425°F. Top each potato with the cheeses and the crumbled bacon.
Step 6: Return the tray to the oven and bake for another 5 minutes or until the cheese is melted.
Serving Tips
- Serve the potatoes with sour cream for dipping. You can also mix the sour cream with chopped fresh chives, a squeeze of lemon juice, salt, and pepper for a creamy and tangy dip.

How should I cook the bacon before adding it to the potatoes?
You can either pan-fry the bacon or cook it in the oven before you start the potatoes. I like using my air fryer to cook bacon! Whichever method you use, make sure you drain the fat from the bacon before chopping and adding to the tops of the potatoes.
Should I pre-boil the potatoes before roasting them?
Pre-boiling the potatoes before roasting is a matter of personal preference. I find that pre-boiling can result in a mushy potato.

Storage, Freezing and Reheating Tips
Refrigerator: After the potatoes have cooled completely, store any leftovers in an airtight container. Place the containers in the refrigerator as soon as possible. Roasted potatoes should be refrigerated within 2 hours of cooking to prevent bacterial growth.
Freezer: I do not recommend freezing this potato recipe. They will be mushy when you defrost them.
Reheating: When reheating the potatoes, it's best to use the oven or toaster oven for optimal crispness. Place the potatoes on a baking sheet and reheat at 350°F until warmed through.
Air Fryer Reheating: You could reheat them in an air fryer as well. Follow my directions in my Air Fryer Potatoes Recipe.
Microwave Reheating: Alternatively, you can use a microwave, but the potatoes may become slightly less crispy.
Top Recipe Tip
To ensure even browning, make sure you flip the potatoes halfway through the cooking time using a spatula or tongs.

Bacon Cheese Potatoes
Ingredients
- 3 large Russet Potatoes
- ¼ cup olive oil
- 4 tablespoons Ranch Seasoning Mix
- ½ teaspoon black pepper
- 1 cup mozzarella cheese
- 1 cup Cheddar cheese
- 8 slices cooked bacon
Instructions
- Preheat the oven to 350°F.
- Slice the potatoes to ½ inch thickness.
- Brush with the olive oil and sprinkle with the Ranch seasoning mix and black pepper.
- Flip over each potato slice and repeat.
- Bake for 20 minutes.
- Remove the baking tray from the oven and flip the potato pieces over. Return the tray back to the oven.
- Turn the oven up to 375°F and continue baking the potatoes for an additional 15 minutes.
- Remove the baking tray from the oven and turn the oven temperature up to 425°F.
- Top each potato with the cheeses and the crumbled bacon. Return the baking tray to the oven and bake for 5 minutes or until the cheese is bubbling.
- Serve with sour cream on the side.
