Make-Ahead Tips for a Stress-Free Thanksgiving
- Prepare a few of the side dishes ahead of time, freeze them, and bake them once the turkey comes out of the oven.
- Chop the veggies and prep the cheese for your Turkey Charcuterie Board the day before, storing everything in plastic baggies or containers so assembly is quick and easy.
- Make the mashed potatoes the day before and refrigerate them in a plastic container. Warm them in a crock pot on low Thanksgiving morning, adding a little milk or heavy cream if needed.
- Bake homemade yeast rolls a few days early and freeze them so they’re ready for the oven on Thanksgiving Day.
- Chop onions, celery, and fresh herbs the day before and store them in airtight containers for stuffing, gravy, or casseroles.
- Prepare a gravy base ahead of time using turkey or chicken stock, then finish it with pan drippings on Thanksgiving Day.
- Set the table and set up the buffet table the night before and place sticky notes in serving dishes to remind yourself what goes where, saving time when everything is ready to serve.

The mashed potatoes, cranberry sauce, and several side dishes reheat beautifully, and desserts like pies or galettes are perfect make-ahead options. Even if you’re cooking the turkey on Thanksgiving Day, prepping sides, chopping vegetables, and making sauces ahead will save you a ton of time and stress.
Most of the Thanksgiving recipes included in this menu will easily serve 10–12 people, making them a great fit for a family gathering or holiday crowd. And if you’re cooking for more (or fewer), you can use the serving-size slider in the recipe card to automatically adjust the ingredient amounts. It’s an easy way to scale each dish up or down to fit your celebration.
Keeping everything warm until it’s time to serve can be one of the biggest Thanksgiving challenges. I listed several helpful ideas above in the Recommended Kitchen Tools section, but my favorite solution is the warming mat — it keeps casseroles, sides, and even rolls at the perfect temperature without overcooking them. You can also cover dishes tightly with foil, use warming trays, or keep items in a low oven (around 200°F) until you’re ready to bring everything to the table.
