Step 1: Grate the zucchini and place it in a fine mesh strainer. Sprinkle with salt and let sit for 15–30 minutes. Then, squeeze out as much liquid as possible with your hands.
Step 2: Add the drained zucchini to a large mixing bowl, then add the remaining ingredients. Stir until everything is well combined.
Step 3: Use a cookie scoop or two spoons to drop the batter into a frying pan heated with a little cooking oil. Gently pat the fritters with the back of the spoon to make them uniform in shape.
Step 4: Cook the fritters for 4–5 minutes on each side, or until they are crispy and golden brown.
Step 5: Transfer the fritters to a baking tray that's lined with paper towels to help absorb any excess oil.
Insider Tips from My Kitchen to Yours
✔️ DO squeeze out as much liquid from the zucchini as possible so the fritters turn out crisp, not soggy.
❌ DO NOT skip the resting time with salt—this step is key to drawing out extra moisture.
Storage & Serving Tips
Serving Tips : Keep fritters warm in a low oven (about 250 °F) until serving. Offer them with a dollop of sour cream or yogurt, a sprinkle of fresh herbs, or dip them in ketchup.
Refrigerate: Store cooled fritters in an airtight container in the fridge for up to 4 days.
Freezer: Freeze cooked fritters flat and separated with parchment paper in a freezer-safe bag or container. They’ll keep well for up to 3 months.
Thaw & Reheat: Thaw overnight in the refrigerator. Reheat on the stovetop or in an air fryer until heated through and crispy—this helps restore their crunch.

Grating zucchini ahead of time is a great way to save time when cooking. The vegetable can be grated using a coarse cheese grater or a food processor fitted with a grating attachment. Once grated, the zucchini can be stored in an airtight container in the refrigerator for up to three days. When ready to use, simply add the desired amount of grated zucchini to your recipe.
Zucchini fritters often fall apart if the zucchini isn’t drained well, leaving too much moisture in the batter. Make sure to squeeze out the shredded zucchini thoroughly before mixing. If the batter still seems too thin, add a little more flour. Also, cook in hot oil—if it’s not hot enough, the fritters will absorb excess oil and break apart.
Yes! You can replace the flour in this recipe with 1 cup of Bisquick Baking Mix. The fritters may turn out a little fluffier since Bisquick already contains flour, baking powder, shortening, and salt, but they’ll still be crispy and delicious.
