How to cut zucchini into sticks
For this recipe, you need to cut the zucchini into uniform sticks so they cook evenly in the air fryer. Here are a few easy tips to follow for cutting zucchini:
- To cut zucchini into sticks, start by trimming off the ends of the squash.
- Cut the zucchini in half lengthwise, and then slice each half into thirds or quarters.
- Next, cut the zucchini crosswise into sticks that are about ¼-inch thick. If your zucchini sticks are too thick or too thin, they may not cook evenly.
- Once you have cut the zucchini into sticks, you're ready to follow the recipe below.

The last two summers our zucchini were destroyed and eaten by a bug. So we decided this year to plant twice as many plants in different areas of our garden in case the bug came back

Step-by-Step Instructions
Trim off the top and slice the zucchini in half shortways. Slice longways into skinny pieces that resemble sticks or fries. Work in batches and begin coating the zucchini sticks.

Make sure you cut the sticks all the same size so cooking is even.
First dip in the flour, then in the egg mixture. Shake off the excess.
Then dip in the mixture of Panko breadcrumbs, Parmesan cheese, and garlic powder. Lay the zucchini sticks flat on a baking tray until all are coated.
Air Fry the Zucchini
Arrange the zucchini sticks in the air fryer basket or baking tray. Do not let them overlap.
Air fry at 400°F for 8-10 minutes or until the zucchini sticks are golden brown. There is no need to turn or flip them halfway through. Remove from the basket carefully using tongs.

Storing, Freezing and Reheating Tips
Refrigerator: Leftover zucchini sticks can be stored in the fridge for up to four days. To store, place them in an airtight container or wrap them tightly in plastic wrap.
Reheating: When reheating, make sure to heat them in the air fryer for a few minutes all the way through.
Freezing: I don't think these zucchini sticks will freeze well.
