How to Slice Apple for Apple Pie
- When looking for apples that are suitable for baking, choose firm and tart varieties. Some popular options are Granny Smith, Honeycrisp, or Braeburn.
- Begin by thoroughly washing the apples under running water. Next, use a vegetable peeler to remove the skin. If you prefer to keep the skin on, that's perfectly alright!
- Use an apple corer or a sharp knife to remove the apple cores. Make sure to cut around the core and remove any seeds.
- Start by placing each cored apple on a cutting board. Hold the apple firmly and confidently slice it into thin, even slices. Aim for slices that are about ¼ inch thick for the perfect bite-sized snack. And if you prefer thicker slices, no worries! Just adjust the thickness to your liking.
- Stop your apple slices from turning brown by simply tossing them with a splash of lemon juice. The natural acidity in the lemon juice works wonders in slowing down the browning process.

Step-by-Step Instructions
Step 1: Combine the salt with the flour, then incorporate the shortening. Use a pastry blender until the mixture resembles cornmeal. Gradually add water, one tablespoon at a time, stirring with a fork until well incorporated.
Step 2: Keep adding the water and stirring until the dough comes together and forms a ball. Shape the dough into a flat disc, wrap in plastic wrap and refrigerate for about an hour.
Step 3: Peel, core, and dice the apples then toss them in the lemon juice, sugar, and cinnamon.
Step 4: On a lightly floured surface or on a piece of parchment paper, roll the dough out to ⅛th inch thick.
Step 5: Use the individual pie plate as a guide to cut out 4 circles.
Step 6: Press the bottom crust into both of the pie plates.
Step 7: Evenly distribute the apple pie filling among the pie plates, then divide the butter and place it on top of the apples.
Step 8: Position the top crusts over the pies, then trim and crimp the edges. Line a baking sheet with parchment paper, before adding the pies.
Step 9: Coat each pie with egg wash and sprinkle sugar on top.
Apple Pie Internal Temp
To check if your apple pie is completely baked, insert a meat thermometer into the center of the pie. When it reaches 175°F, it's done!
Step 10: Preheat the oven to 375°F and bake for 25-30 minutes until the crusts turn golden brown and the filling bubbles. Let the pies cool for 10 minutes before serving.

Storing and Reheating Tips

A full size 9 inch pie would take about an hour, where on the other hand, our individual pies bake for 20-30 minutes. Look for when you can see the filling bubbling up through the vents of the top crust. If there's no bubbles, it needs more time in the oven.

Apple Pie for Two
Ingredients
For the Pie Crust:
- 1 cup flour
- ¼ teaspoon salt
- ⅓ cup shortening
- 3-4 tablespoons ice cold water
For the Apple Pie Filling:
- 2 apples
- ½ tablespoon lemon juice
- ½ cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon butter
Instructions
Prepare the Pie Crust:
- Combine the flour and salt together.
- Using a pastry blender or two forks, combine the shortening into the flour until it looks like cornmeal.
- Using a fork, add the water one tablespoon at a time and incorporate the water into the flour/shortening mixture.
- Keep adding the water, one tablespoon at a time, and keep stirring until the dough begins to come together, pulling away from the sides of the bowl and forming a ball of dough.
- Remove the ball of dough from your bowl and shape it into a flat disc.
- Wrap in plastic wrap and chill for about an hour before using.
Prepare the Apple Pie Filling:
- Peel, core, and dice the apples into quarters.
- Toss the apples with the lemon juice.
- Add the sugar and cinnamon to the apples, then toss to combine.
Prepare the Pies:
- Preheat oven to 375°F.
- On a lightly floured surface, roll out the pie dough to ⅛th inch thick and using the individual pie plate as a guide, cut out four circles; 2 for the bottom crusts and 2 for the crusts.
- Press the bottom crust into the 2 pie plates.
- Divide the apple pie filling evenly between both pie plates.
- Divide the butter between both pies.
- Arrange the top pie crust on top of the apples. Trim and crimp the edges.
- Place both pies on top of a sheet pan that's been lined with parchment paper.
- Brush each pie with the egg wash. Sprinkle the tops of each pie with a sprinkle of sugar.
- Bake the pies for 25-30 minutes or until golden brown and the filling is bubbly.
- Allow to cool for 10 minutes before serving.
