Made with refrigerated sugar cookie dough, cream cheese frosting, and fresh fruit,this delicious dessert is easy to make and sure to impress your guests.
I made it in a cast iron skillet, but you can easily use a cake pan or even a round pizza pan!

Skillet cookies are a great way to enjoy the gooey goodness of a classic chocolate chip cookie, but with a twist.
For this recipe, I used store-bought sugar cookie dough which makes it easy to put together. The addition of cream cheese frosting and fresh fruit not only adds flavor but also makes it perfect for the Fourth of July.

For this recipe, it's not only important to preheat the oven, but you should also preheat the cast iron skillet. That way the dessert cooks evenly and doesn't stick to the pan.
Even if your cast iron skillet is well-seasoned, you might want to give it a light coating of cooking spray or butter to prevent sticking.
Allow the cookie cake to cool completely in the skillet before frosting to prevent melting.
What to Use If You Don’t Have a Cast-Iron Skillet?
You can easily use a 9 or 10-inch round cake pan or parchment-lined baking sheet also work, though the latter requires shorter baking. Check out my Sheet Pan Chocolate Chip Cookie Recipe for full instructions.
You could even try using a 9-inch pie plate, however, the cake might be slightly thicker center.

Step-by-Step Instructions
Step 1: Preheat your oven to 350°F (175°C). Lightly grease a cast iron skillet. Roll out the cookie dough and carefully transfer it to the prepared skillet. Bake for 12-14 minutes, or until the edges are golden brown.

- Roll the dough out on parchment paper. This helps move the dough to the pan once it's rolled out, and you don't have to worry about using flour to keep it from sticking.
Patriotic Cookie Decorating Ideas
Step 2: Once the cookie cake has cooled completely, spread the cream cheese frosting over the top.
Step 3: Add the fruit to decorate how you like! SInce this is a patriotic themed cookie cake, I'm using blueberries, strawberries and red raspberries. You can change up the fruit to your favorite.

Why is my cookie cake hard?
You most likely overbaked the cookie cake. You can try microwaving it for a few seconds or reheating it in the oven to soften it up. Or you could crumble the cake up and use it as a topping for ice cream or even yogurt.
How Long does Cookie Cake Last?
A cookie cake can last up to 3 days if tightly covered in the refrigerator. It's best eaten within a day, since the fruit will begin to dry out.
Storing, Freezing, and Thawing Tips
Refrigerator: Store any leftovers in an airtight container or wrapped in plastic wrap in the refrigerator for up to 3 days.
Freezer: While freezing the fully decorated cake is not recommended, you can freeze the unfrosted cookie cake by wrapping it tightly in plastic wrap, then again in aluminum foil or placing it in a freezer-safe container.
Thawing: When ready to serve, thaw the cookie cake in the refrigerator overnight or on the counter for a few hours. Then decorate as instructed above.

Patriotic Cookie Cake
Ingredients
- 1 16 ounce refrigerator sugar cookie dough
- 1 16 ounce container cream cheese frosting
- ½ cup blueberries
- ½ cup strawberries
- ½ cup raspberries
Instructions
- Preheat the oven to 350°F.
- Roll out the cookie dough and place it in either a cast iron skillet, round pizza pan, or a round cake pan.
- Bake for 12-14 minutes or until the cookie is baked all the way through.
- Remove from the oven and allow it to cool on a baking rack.
- Frost with the cream cheese frosting and begin garnishing with the fruit in a decorative pattern.
